Tomates à la Provençale (Tomatoes Provencal)
Tomayto… tomahto? Fruit… vegetable 🤔?
These little guys can be quite a controversy, but worldwide, we love them! It doesn’t matter how you pronounce them or if you treat them more like a vegetable than a fruit, tomatoes 🍅 are delicious! They are incredibly versatile, used in sauces, stews, breakfast items, beverages, salads, soups, appetizers, bread, and so on, as well as in desserts… that’s right, you read correctly – dessert!
Now, this bit of trivia will blow your mind…
Did you know that there are over 20,000 varieties of tomatoes in the world 🌍? That’s incredible, and apparently the number just keeps growing. It’s a plant that millions of people love to grow. David and I grow them on our patio every year. It’s fun, and they taste so fresh… yum! By the way, we recently grew Purple Blue Cherry Tomatoes – it was quite interesting.
Summer is here, and of course, we tend to cook almost everything and anything on the BBQ. David and I have a love affair with it! Our dream is to have a big backyard with a pool 🏊♂️ and a very large grilling area for our BBQ, a smoker, and a pizza oven. We just love grilling food!
One side dish I’ve been making for years for its simplicity but also for its amazing freshness is Tomates à la Provençale (Tomatoes Provençal)! With a beautiful mix of fresh herbs that we grow 👩🌾👨🌾 on the patio, this recipe pairs so well with any grilled meat. Many people cook this in the oven… I prefer it on the BBQ! Why start the oven when it’s barbecue season?

Tomates à la Provençale • Tomatoes Provençal

Ingredients
- 1 large tomato, washed and halved tips & tricks
- 1/4 cup Panko® breadcrumbs
- 1 tbsp. Parmesan cheese, grated tips & tricks
- 1 large clove garlic, pressed
- 2 large basil leaves, chiffonade tips & tricks
- 1/2 tbsp. fresh chives, chopped tips & tricks
- 1 tbsp. flat or curly leaf parsley, chopped tips & tricks
- freshly ground mixed peppercorns, to taste
- 1 small pinch ground Himalayan pink salt
- 1 1/2 tbsp. extra virgin olive oil tips & tricks
- cayenne pepper, to taste
Directions
- Preheat barbecue to 500ºF
- Cut tomatoes in half; set aside.
- Mix in a bowl together breadcrumbs, Parmesan cheese, garlic, basil, chives, parsley, freshly ground black pepper, sea salt and oil.
- Wrap halved tomatoes in aluminum foil, creating a bowl with a small retaining wall.
- Spoon on the breadcrumb mixture, covering the entire surface; sprinkle with cayenne pepper.
- Place wrapped tomatoes on the indirect heat of the grill, close the lid and cook for 4 minutes.
- If you choose the oven instead, cook them at 350ºF for 12 minutes. Turn the broiler on and cook until the tops are browned.
