Skewers are always trendy during BBQ season!

There’s no doubt in my mind that when it comes to cooking, summer is all about barbecuing. You have such a wide variety of recipes you can make on the “barbie”… from savory to sweet. Also who wants to cook inside when the temperature goes way up?
 
When it comes to barbecued food, I like them all and have a lot to choose from including Turkish Kebabs, Grilled Marlin Steaks, Grilled Fish Tacos<, Chicken Chapli Kebab, Tarragon Limoncello Halibut, Grilled Tuna Steaks, Rotisserie Chicken, Greek Ouzo Pork Kebabs, and many more. Something about grilling on open flames that makes it taste better. As the food starts cooking on the BBQ, just the smell alone triggers my appetite. Also the char on the food gives another level of flavor… I love BBQ season!
 
I have many grilled recipes that I’ve created over the years and most of them during the winter with the anticipation of my favorite time of the year coming up.
I don’t like to complicate recipes especially during the summer time. It’s too hot outside, plus I want to enjoy myself being outdoors not indoors and quick & easy recipes are always welcome. Having said that, in this episode I’m sharing another awesome BBQ recipe with you that my family and friends love when I make it!

There are two ingredients that I’ve already posted that I utilize in this recipe; my Creole Seasoning Mix and my Homemade Andouille Sausage. The spiciness from the creole blend along with the smokiness (and spiciness as well) from the sausage, gives this dish a real Creole flair.

Creole Shrimp & Andouille Skewers

Ingredients
  

  • 1 tbsp. creole seasoning mix see Recipe
  • 1/4 cup unsalted butter, melted tips & tricks
  • 3 tbsp. freshly squeezed lemon juice tips & tricks
  • 1 tbsp. lemon zest
  • 12 large shrimp or prawns, rinsed, peeled and deveined
  • 16 large pieces red onion
  • 16 large pieces mixed bell peppers
  • 12 large slices andouille sausage, cut to 1/2-inch thick see Recipe
  • 12 whole cherry tomatoes, washed tips & tricks
  • 4 skewers

Directions
 

  • In a medium mixing bowl, combine creole seasoning, butter, lemon juice and zest. Add the prawns and toss until well coated.
  • Thread on red onion, bell pepper, andouille, cherry tomato, and then a prawn, piercing it twice. Repeat with the same order of ingredients finishing with onion. Brush the remaining creole mixture over the skewers.
  • Preheat the barbecue to 500ºF
  • Brush the grates with oil, using tongs and paper towels before adding the skewers. Close the lid and grill for 5-6 minutes, turning once.
