Grilled Jalapeño Poppers

I’m a barbecue foody (yes with a “y”) because I love the smokiness of grilled food. If I have to choose between a filet mignon seared in a cast iron pan versus on the barbecue, I’ll go for the grilled one – the same applies to Grilled Chicken versus the one I baked in the oven.
 
There’s another recipe that I enjoy even more since we bought a pepper roasting rack a few years back and it’s my Grilled Jalapeño Poppers! Smoky, slightly spicy and cheesy, these are scrumptiously delicious and great for backyard parties. The beauty of this recipe is the poppers can be stuffed ahead of time so they’re ready for when you want to cook them on the barbecue.
 
Technically, poppers are deep-fried and although I love them that way, during the summer time they’re better on the grill plus you don’t have to stay inside to cook them. It’s a nice twist on an American classic.
 
Stuffed with a bunch of tasty ingredients, this is an incredible barbecue recipe! I use my mild Italian sausage because the peppers already have some heat but nothing is stopping you from using hot. If you make my Homemade Sausage recipe and want it to be mild, don’t add any red pepper flakes. I also add some onions and fresh chopped rosemary to the meat mixture along with two types of cheese and pimento peppers. The combination is totally a “wow” factor for these Grilled Jalapeño Poppers!

Grilled Jalapeño Poppers

Grilled Jalapeño Poppers

Filled with great ingredients, this Grilled Jalapeño Poppers recipe is a delicious appetizer to enjoy this summer!

Ingredients
  

  • 12 large jalapeño peppers, washed, ribs removed and seeded
  • 1/2 cup Italian sausage, casing removed Recipe
  • 1 tbsp. red onions, finely chopped
  • 1 tsp. fresh rosemary, finely chopped
  • 6 ounces light cream cheese, room temperature and divided
  • 3 ounces grated sharp Cheddar cheese, divided
  • 1/2 jar (1.25 oz) diced pimiento peppers, drained

Directions
 

  • In a skillet over medium-high heat, add sausage (*see footnote) and sauté until no longer pink, about 3 minutes. Halfway through cooking, add onions and cook until done. Before removing from the heat, add rosemary; stir well.
  • Transfer to a bowl and add cream cheese, cheddar cheese and diced pimentos; stir until well blended. Stuff the prepared peppers leaving some head space for the remaining cream cheese. Place stuffed jalapeños on the rack and top with cream cheese before transferring to a baking sheet lined with a silicone mat to prevent it from sliding.
  • Place rack in the middle of a 450-500ºF preheated grill, close the lid and cook for 20 minutes. When time is done, carefully remove the rack from the heat back to the lined silicone baking sheet. Serve immediately

Footnote: I use mild but feel free to use hot Italian sausage if you like.
