Besides enjoying the nice warm weather and outdoor activities, summer is also about appreciating the fresh produce available during this particular season. A wide variety of fruits and vegetables are abundantly displayed in the grocery bins tempting us to buy more that we usually do. Moreover, it seems that people tend to eat more salad during the hot months of the year which is a nice healthy eating habit to have.

I can’t stop repeating myself by mentioning how important it is to eat a little salad every day. It’s healthy plus it helps the body function better. Salads don’t have to be restricted only to lettuce. A beautiful mix of produce can also be considered as a salad like Tabbouleh, Chickpea Corn Salad, Jicama Mango Pepper Salad, Creamy Bacon Potato Salad, Moroccan Couscous Salad, Summer Creamy Coleslaw, Cucumber Salad, Greek Salad, Asparagus Summer Salad, Hearts of Palm Salad, Classic Pasta Salad, and many more…

This featured recipe is another tasty example of enjoying a salad without the lettuce. Here’s my Mixed Tomato Salad! This is an amazing side dish! With a beautiful combination of ingredients like shallots, basil leaves, bocconcini, etc., this is a tasty salad to make! It pairs so well with many proteins and it’s a delicious change from a regular garden salad.

I use a variety pack of cherry tomatoes because the different colors make it more appealing. You can use strictly red if you want but let’s not forget that we always eat with our eyes first so why not serve a rainbow of colors like this Mixed Tomato Salad!

There’s a quick vinaigrette that pairs very well with it. It’s an equal amount of extra virgin olive oil, balsamic vinegar and granulated sugar. To this, I add just a little bit of hot paprika which gives the salad a hint of spice without compromising on the freshness of the ingredients.

This Mixed Tomato Salad is a popular dish at home. We like to make it because it’s quick & easy, and so tasty! It’s a great healthy salad to serve your family or during one of your backyard parties. Enjoy the freshness of summer with this delicious side dish…

  • 1/4 cup shallots, finely chopped
  • 1 large clove garlic, pressed
  • 1 tbsp. basil leaves, finely chopped plus more for garnish tips & tricks
  • 1 tsp. oregano leaves, finely chopped
  • 3/4 cup (120 g/12 oz.) mini Bocconcini cheese, drained and halved
  • ground Himalayan sea salt, to taste
  • freshly ground black pepper, to taste (I always use mixed peppercorns)

  • 1 tbsp. extra virgin olive oil tips & tricks
  • 1 tbsp. balsamic vinegar
  • 1 tbsp. granulated sugar
  • 1/4 tsp. hot paprika

  • To a mixing bowl, add halved tomatoes, shallots, garlic, basil, oregano, Bocconcini, sea salt and freshly ground black pepper. Gently toss until the ingredients are well combined, cover and transfer to the fridge for at least 1 hour.
  • To make the vinaigrette: In a small container, add extra virgin olive oil, balsamic vinegar, granulated sugar and hot paprika. Cover and shake well until everything is well blended. Transfer to the fridge until ready to serve.
  • Before pouring the vinaigrette over the salad, give another good shake to make sure it’s well mixed, pour it on, and gently toss the salad until the ingredients are well coated.
