I love Thanksgiving and Christmas and I also love when it’s over, back to my crazy routine. Holidays are fun but there’s a lot of work involved for the hostess; organizing, shopping, decorating and prepping the food. The day after is when we can finally relax and most of the time we end up with leftovers. We just need to warm it up and voila… dinner is ready.
 
Leftovers are great because it gives us a breather from cooking but after a few meals, we start getting blasé. I don’t mind leftover Turkey because I can recreate other dishes with it like Pot Pie, Croquettes, Turkey Tetrazzini, Turkey Noodle Soup, Turkey Zucchini Boats, Stuffed Crêpes with Poblano Sauce, Turkey Chili Tex-Mex Style or even this one… Club Sandwich with Chipotle Mayo!
 
This is such a delicious sandwich that we enjoy having often! Usually, straight Mayo is used but mixing in Chipotle Purée with it gives another dimension to this old classic! The measurements below are according to my husbands and my liking but if you prefer it milder or hotter, adjust accordingly. Some like using mustard instead, but please use what you like… it’s your sandwich after all!
 
When it comes to bread for this Club Sandwich with Chipotle Mayo recipe, white is standard but nothing is stopping you from using wheat, sourdough, Challah, artisan, Italian or French bread. I switch it up all the time depending on what I have on hand.
 
Now with the cheese… the same thing applies, use what you have on hand. I don’t mind mixing different kinds in my sandwich. It can be Provolone, Swiss, sharp Cheddar, and so on. If I have Emmental which is pretty close to Swiss cheese, I use it.

Club Sandwich with Chipotle Mayo

Piled high with yummy ingredients, this Club Sandwich with Chipotle Mayo is absolutely amazing! It's a great way to use up leftover turkey.

Ingredients
  

  • 1/2 tbsp. chipotle purée tips & tricks
  • 3 tbsp. mayonnaise see Recipe
  • 6 slices bread, toasted, buttered and divided
  • 4 slices cooked turkey (substitute chicken) see Recipe
  • 6 slices bacon, cooked tips & tricks
  • 4 slices tomato, washed
  • freshly ground black pepper, to taste (I always use mixed peppercorns)
  • ground Himalayan sea salt, to taste
  • 4 slices processed cheese such as Velveeta®
  • 6 slices Black Forest ham
  • 4 slices Jarlsberg cheese
  • A few butter lettuce leaves, washed
  • 4 large toothpicks

Directions
 

  • In a small bowl, combine chipotle purée and mayo; stir, taste and adjust if needed.
  • Spread a thin layer of chipotle mayo on one slice of bread and cover with 2 slices of turkey then add 1 ½ slices of bacon followed by a couple of slices of tomato; season with freshly ground black pepper and ground sea salt. Add 2 slices of processed cheese before adding another toasted bread slice, spread on chipotle mayo; press down gently.
  • Add 3 slices of ham, another 1 ½ slices of bacon, a couple Jarlsberg cheese slices and cover with lettuce. Add the top toasted slice of bread spread with chipotle mayo. Press down again, carefully slice the sandwich diagonally and secure each half with a toothpick. Repeat with the second sandwich.
