Shrimp Bruschetta
David and I entertain a lot, especially during the summertime. The weather is nice, so we fire up the barbecue and eat outside on the patio. Unless it’s during the holiday season 🎄, I tend to serve more hors d’oeuvres: small, bite-sized foods.
Depending on the occasion, it can be Cucumber Tea Sandwiches, Korean Meatballs, Caprese Skewers, Kentucky Hot Brown Sliders, Croquetas de Jamón • Ham Croquettes, Gougères aka Cheese Puffs, Crab Stuffed Mushrooms 🦀, etc.
There’s one that falls into this category, and it’s Bruschetta. This popular Italian finger food is always a crowd-pleaser 👨👩👧👦! Besides my Duxelles Bruschetta and my Italian-Style, here’s another amazing recipe… my Shrimp Bruschetta!
Deliciously different and original, this take on a Roman classic is simply incredible! It can be served as is, as a snack or canapé, along with a charcuterie board, or with a green salad 🥗. It’s quick and easy to make with fabulous results!
The most common bruschetta is the basic tomato salad made with basil, onions 🧅, garlic, and oil with salt and pepper, served over crostini. Don’t get me wrong, I love it, but I’m the type of person who likes to elevate recipes, just like when I created my Duxelles one.
As the title indicates, this version is made with shrimp that have been grilled on the BBQ and basted with my gorgeous Garlic Herb Butter. The crostini are spread with goat cheese before being topped with a tomato salad 🍅. Grilled shrimp follow, and then it’s finished with a drizzle of my Homemade Balsamic Glaze… yummy!
Let’s talk about the cheese 🧀…
I love goat cheese, but in the past few years, the prices have gone up quite significantly. These Shrimp Bruschetta are loaded with deliciousness therefore, cream cheese can easily be swapped in lieu. It’s less expensive 💰 and will still deliver in the flavor department.
Before grilling 🔥 the shrimp, it’s important to pierce them twice. This prevents them from spinning around, making it easier to flip and cook them evenly. It also secures them, preventing them from falling off the skewer and into the BBQ.
These small bites are so flavorful and pair very well with a nice, crisp, dry white wine such as Sauvignon Blanc or Pinot Grigio. Additionally, one that is very refreshing and complements this featured recipe is White Sangria. It has a lovely citrus note 🍋 that is a great match for shrimp!
With many events taking place during the summer season, this Shrimp Bruschetta is a wonderful appetizer to serve. With bold flavors, this is certainly a crowd-pleaser, and you’ll definitely wow 😮 your guests with this classy finger food!

Shrimp Bruschetta

Ingredients
- 2 to 3 Roma tomatoes (about 1/2 cup), washed, seeded and diced tips & tricks
- 1 tbsp. red onions, finely chopped tips & tricks
- 1/2 tbsp. fresh basil leaves, chopped tips & tricks
- freshly ground mixed peppercorns, to taste
- 1/2 tbsp. extra virgin olive oil, plus more to brush bread slices to make crostini
- 1 French baguette, sliced 1/2-inch thick see Recipe
- 1/3 cup room temperature goat cheese (substitute cream cheese), or as needed
- 1/2 lb. (about 10 to 12) large shrimp or prawns, peeled and deveined
- 1 tbsp. canola oil, or as needed for BBQ grates tips & tricks
- 3 tbsp. Garlic Herb Butter see Recipe
- Balzamic Glaze, as needed to drizzle see Recipe
Directions
- Make crostini and allow to cool off a little before spreading goat cheese. Spoon tomato mixture on top of prepared crostini; set aside.
- Preheat BBQ between 500ºF to 550ºF and oil grates with canola oil using tongs and paper towel.
- Thread shrimp on skewers, piercing them twice and leaving a little gap between each of them. Place them on hot grates and grill for 1 to 1:30 minutes per side.
- After flipping, baste shrimp with Garlic Herb Butter; cook for 1 to 1:30 minutes. Flip again, and baste with the remaining butter; remove from the heat.
- Allow to cool off before placing a shrimp on top of a crostini. Drizzle with Balsamic Glaze and serve immediately.
