When I entertain, fast and easy appetizers are what I prefer to make; I spend enough time cooking a beautiful main course and baking a scrumptious dessert, the last thing I need is to focus on the first course. There’s a delicious selection I can choose from like Sweet Chili Chicken Bites, Onion Rings, Sardine Cups, Bruschetta, Oysters Rockefeller, Moo Shu Pork Tortillas, Coquilles St Jacques, Zucchini Sticks, Asian Cucumber Salmon Rolls, Stuffed Buns, Seafood Cocktails, Jalapeño Bacon Cheese Dip, and many others…
 
I love Greek food and I have a few quick & easy appetizer recipes as well including Greek Salad, Saganaki Opa, Olive Tapenade, Greek Pizza, Tzatziki Dip, Dakos, etc. including this featured one… Baked Greek Pita Wedges!
 
As simple as the combination of ingredients is, the results are fabulous! Just to name a few, there’s Greek yogurt, feta cheese, Greek seasoning, garlic, mint leaves, etc. After the topping is nicely blended and spooned over the pita, it takes 10 minutes to cook in the oven… awesome!
 
This is one of my go-to appetizer recipes. It doesn’t matter the time of year or the event, these Baked Greek Pita Wedges are always a hit! To bring them a notch higher in the yumminess department, I like to dress the pita up with pieces of cherry tomatoes and a few slices of black olives… it wraps everything up so beautifully!
 
It doesn’t matter if it’s a party, a get together with friends or a special occasion, I like to make quick and easy appetizers and these Baked Greek Pita Wedges are perfect for that! They also make a great mid-afternoon snack. In 20 minutes or so, they’re ready to eat… is that quick or what?

Baked Greek Pita Wedges

Baked Greek Pita Wedges

Very easy to make, these Baked Greek Pita Wedges are deliciously ideal for entertaining or as a mid-afternoon snack.

Ingredients
  

  • 1/2 cup Greek yogurt
  • 1/4 cup feta cheese, crumbled
  • 1/2 tbsp. freshly squeezed lemon juice tips & tricks
  • 1 tsp. Greek seasoning see Recipe
  • 1 small clove garlic, pressed
  • 1/2 tsp. mint leaves, chopped tips & tricks
  • freshly ground black pepper, to taste
  • 1 tsp. olive oil
  • 2 medium (about 8-inch diameter) pita
  • 1/4 cup cherry tomatoes, cut into small pieces tips & tricks
  • 2 tbsp. black olives, sliced

Directions
 

  • Preheat oven to 400ºF
  • In a mixing bowl, add yogurt, feta cheese and lemon juice. Stir until mixed pressing down on the cheese with the back of our spoon to break it up.
  • Add Greek seasoning, garlic, mint leaves, black pepper and olive oil; stir until well incorporated.
  • Place pita bread on a baking sheet lined with a silicone mat and evenly spread the feta cheese mixture over each.
  • Transfer to the preheated oven and bake for 10 to 12 minutes or until the edges are golden.
  • Remove from the heat and slice pita into 4 equal pieces. Add some tomato pieces and sliced black olives. Serve immediately.
