Baked Greek Pita Wedges

Very easy to make, these Baked Greek Pita Wedges are deliciously ideal for entertaining or as a mid-afternoon snack.

Ingredients

  • 1/2 cup Greek yogurt
  • 1/4 cup feta cheese, crumbled
  • 1/2 tbsp. freshly squeezed lemon juice tips & tricks
  • 1 tsp. Greek seasoning see Recipe
  • 1 small clove garlic, pressed
  • 1/2 tsp. mint leaves, chopped tips & tricks
  • freshly ground black pepper, to taste
  • 1 tsp. olive oil
  • 2 medium (about 8-inch diameter) pita
  • 1/4 cup cherry tomatoes, cut into small pieces tips & tricks
  • 2 tbsp. black olives, sliced

Directions

  • Preheat oven to 400ºF
  • In a mixing bowl, add yogurt, feta cheese and lemon juice. Stir until mixed pressing down on the cheese with the back of our spoon to break it up.
  • Add Greek seasoning, garlic, mint leaves, black pepper and olive oil; stir until well incorporated.
  • Place pita bread on a baking sheet lined with a silicone mat and evenly spread the feta cheese mixture over each.
  • Transfer to the preheated oven and bake for 10 to 12 minutes or until the edges are golden.
  • Remove from the heat and slice pita into 4 equal pieces. Add some tomato pieces and sliced black olives. Serve immediately.
