As we welcome in the New Year, I’m sure many of you have set some goals and/or resolutions. Two of mine are to be physically more active 🚴‍♀️🏃‍♀️💃 and also spend more time with David. I average about 110 hours of work per week, leaving little time for other things but this year I want to change that…
 
Eating healthy 💚 is probably on most people’s lists and what I like to do each year is to post a salad as my first recipe of the year such as Julienne Salad, Winter Citrus Salad, Classic Cobb Salad, Quinoa Beet Salad, Pear Pomegranate Blue Cheese Salad, Egyptian Farro Salad, Glass Noodle Salad, and so on. It’s tasty, healthy, easy to make and after indulging over the Holidays, a light meal is the way to go…
 
The 1st recipe of 2019 is my Asian Chicken Salad! This salad is packed with so many flavors. With fresh ingredients like cabbage, bell peppers, celery, carrots 🥕 along with grilled chicken breasts and much more, in a beautiful “slightly spicy” vinaigrette, this salad is sure to start your New Year’s resolutions off right!
 
I mentioned the vinaigrette is “slightly spicy” because it has some bite to it. As I always mention, recipes are a guideline and adaptable. You can change the recipes to your liking – after all you’re in charge of your Asian Chicken Salad 😉!
 
This salad 🥗 recipe is definitely a full meal. Can it be a side dish? Not really because you have your protein and vegetables all in one! You can always serve it with French Baguettes 🥖, Artisan Bread or Dinner Rolls but keep in mind that there are some crispy chow mein noodles in this recipe which give a lovely crunch to the dish.

Ingredients
  

DRESSING

  • 1 tbsp. sesame oil tips & tricks
  • 1/2 tsp. red pepper flakes
  • 2 tbsp. honey tips & tricks
  • 1 tbsp. hoisin sauce
  • 1 tbsp. rice vinegar
  • 1 tbsp. ponzu sauce

SALAD

  • 2 tbsp. sesame seeds, toasted
  • 3 cups iceberg lettuce, chopped
  • 3/4 cup red cabbage, sliced
  • 3/4 cup green cabbage, sliced
  • 1/2 cup red peppers, sliced
  • 1/2 cup yellow peppers, sliced
  • 1/2 cup carrots, sliced
  • 1/2 cup celery, sliced tips & tricks
  • 2 large green onions, thinly sliced
  • 2 tbsp. pickled ginger, finely chopped see Recipe
  • 2 large chicken breasts, grilled and cubed into bite size pieces see Recipe
  • 1/2 cup roasted cashews
  • 3 large mandarin oranges, segmented
  • 1 tbsp. chopped cilantro tips & tricks
  • 1 handful crispy Chow Mein Noodles, for garnish *optional

Directions
 

VINAIGRETTE

  • In a small bowl, infuse oil by combining sesame oil with red pepper flakes; whisk and let it sit for 1 ½ to 2 hours.
  • Later, place a fine sieve over a mixing bowl and pour in the infused oil; discard red pepper flakes. Add honey, hoisin, rice vinegar and ponzu sauce; whisk until blended and set aside.

SALAD

  • In a large bowl, add iceberg lettuce, green & red cabbage, red & yellow peppers, carrots, celery, green onions and pickled ginger; toss gently.
  • Add grilled chicken, toasted sesame seeds, cashews and mandarin segments. Toss again before adding chopped cilantro; toss.
  • Pour on the salad dressing and toss until the ingredients are well coated.
  • Plate the salad and sprinkle on some crispy chow mein noodles.
