Classic Cobb Salad

As a tradition, I like to introduce my 1st Club foody recipe of the year with a salad. It’s a great way to start the New Year. With all the parties we attended during the last few weeks and the indulging we did during the Holidays, it’s time to get back to healthy eating habits.
 
Salads are definitely a good start and here are a few to choose from; Julienne, Waldorf, Asian Chicken, Crab Louie, Caesar, Greek, Winter Citrus, Tabbouleh, Bacon Wedge, Quinoa Beet, just to name a few, including this featured recipe… my Classic Cobb Salad!
 
This is a popular salad that most everyone has had at one time in their life. With lettuce, chicken, avocado slices, cherry tomatoes and many other fresh ingredients, this Classic Cobb Salad is always a great healthy choice. I like to add crumbled bacon (it’s so good…) but of course, it’s optional especially if you’re checking your calorie intake.
 
This salad is absolutely amazing with Blue Cheese Dressing and obviously, I use my homemade version instead of the store bought ones. Would a Classic Cobb Salad be the same without that specific dressing? Some might prefer another dressing like Ranch or Thousand Island… it’s all about preferences.
 
Start 2020 on the right foot with this delicious salad… It’s very easy to prepare, healthy and a lovely meal to have after the Holiday season. This Classic Cobb Salad is surely a good one to enjoy more often…

Classic Cobb Salad

Classic Cobb Salad

With a variety of fresh ingredients, this Classic Cobb Salad is not only tasty but good for you too! It's a delicious meal to enjoy anytime.

Ingredients
  

  • 5 cups iceberg lettuce, chopped (about 1/2 head)
  • 4 large hard-boiled eggs, yolks and whites separated
  • 6 strips cooked bacon, chopped tips & tricks
  • 2 large chicken breasts, cooked and cubed tips & tricks
  • 20 large cherry tomatoes, washed and halved
  • 2 large avocados, cubed tips & tricks
  • 2 tbsp. blue cheese, crumbled (1 tbsp. per plate) tips & tricks
  • 2 tsp. fresh chives, chopped (1 tsp. per plate) tips & tricks
  • 1 tbsp. fresh chopped parsley, for garnish tips & tricks

Directions
 

  • Place 2 ½ cups chopped lettuce on two large plates; set aside.
  • Place a row of chopped egg yolks, followed with a row of chopped bacon.
  • Next, place a row of half of the chicken cubes then a row of tomatoes and another row of the remaining chicken cubes.
  • Add a row of avocado cubes and finish the last row with chopped egg whites.
  • Add the crumbled blue cheese over the ingredients, about 1 tbsp. per plate. Sprinkle with chives and finish with parsley.
  • Pour on your favorite dressing such as Blue Cheese, Ranch, etc.
