Place 2 ½ cups chopped lettuce on two large plates; set aside. Place a row of chopped egg yolks, followed with a row of chopped bacon. Next, place a row of half of the chicken cubes then a row of tomatoes and another row of the remaining chicken cubes. Add a row of avocado cubes and finish the last row with chopped egg whites. Add the crumbled blue cheese over the ingredients, about 1 tbsp. per plate. Sprinkle with chives and finish with parsley. Pour on your favorite dressing such as Blue Cheese, Ranch, etc.
