We all have our “food weaknesses” and during the summer time, mine is burgers! I love the taste of burgers on the “barbie” 🔥. Thankfully, David is the same way and I don’t have to tell you that we do eat a lot of burgers during BBQ season.
 
Here’s something about me… You won’t see me eating burgers unless they’re homemade. I’m not a big fan of the ones at the fast food joints. Most places have these really thin patties, about 1/4 inch thick. What is that 🤨? That’s not a burger! I like a nice thick burger with some personality, not some mass produced concoction.
 
Since we’ve been together, David and I have come up with many different recipes because we both like variety – you need several burger 🍔 recipes during the summer time otherwise it gets boring, right? The fact that we also enjoy having them often is the reason variety becomes a necessity.
 
A few years ago, I thought about having some burgers that night for dinner. The day was beautiful and warm, and the night was going to be pleasant and comfortable. When I opened the refrigerator door, I had my homemade pickled jalapeño peppers jar that was almost gone, a bunch of cilantro, and an avocado 🥑 that needed to be taken care of. There was also some chipotle purée in my freezer already measured out that was sitting there for a while and needed to be used up before they turned into “chipotle-icicles”…

The light 💡 went off and the next thing I know, we were eating my latest creation… Mexican Burgers! Are they spicy? Not really but there’s definitely a bite to them. In the video 🎥, I show you two ways to prepare them; stuffed and unstuffed. I also share with you my Avocado Spread that goes so well with these burgers – it brings the whole Mexican theme together. If you prefer, you can always use David’s Creamy Spicy Guacamole recipe or mine, Classic Guacamole.
 
It’s a nice change from everyday burgers. It’s a great recipe to make for your next backyard party or anytime you want some tasty burgers. You can make these Mexican Burgers ahead of time. I personally never go beyond 3 hours ⏰ in the refrigerator in case they dry out. Could I be wrong? Sure, but why take the risk when we love moist, homemade burgers so much along with fresh homemade hamburger buns

Mexican Burgers

The ingredients set these delicious Mexican burgers apart. With a lovely avocado spread, these burgers will be a hit at your next BBQ party!

Ingredients
  

BURGER

  • 1 1/2 lbs. lean ground beef
  • 6 tbsp. Panko® breadcrumbs
  • 1/4 cup red onions, finely chopped
  • 2 tbsp. pickled jalapeño peppers, finely chopped see Recipe
  • 1 tbsp. chipotle purée tips & tricks
  • 1/2 tbsp, fresh cilantro, chopped tips & tricks
  • 1/2 tsp. ground cumin
  • freshly ground black pepper, to taste (I always use mixed peppercorns)
  • 1/2 cup sharp Cheddar cheese or Pepper Jack, grated
  • 4 large hamburger buns see Recipe

AVOCADO SPREAD

  • 1 large ripe avocado, stone removed and peeled tips & tricks
  • 1 tsp. freshly squeezed lime juice tips & tricks
  • 2 tbsp. crema or light sour cream
  • 1 small clove garlic, pressed
  • 1 tsp. hot sauce such as Cholula®, or more to taste
  • freshly ground black pepper, to taste (I always use mixed peppercorns)

Directions
 

BURGERS

  • In a large bowl, combine ground beef, breadcrumbs, onions, pickled jalapeño peppers, chipotle purée, cilantro, ground cumin, freshly ground black pepper, and cheese. Divide the mixture into 4 equal portions and form 4 patties.
  • Place them on a plate, cover with plastic wrap and transfer to the refrigerator for 1 hour. While the burgers are chilling, make the spread.
  • Preheat barbecue to 500ºF
  • Place burgers on the barbecue, close the lid and grill for 7 minutes per side. If desired, about 3 minutes before the end of cooking, add a slice of cheese of your choice per burger.
  • When they're done, spread avocado mixture to the top buns and garnish your burgers to your liking.

AVOCADO SPREAD

  • In a small bowl, scoop out the avocado and add the lime juice; mash with a fork until smooth. Add sour cream, garlic, hot sauce and freshly ground black pepper; stir until well blended. Transfer the spread to the refrigerator until ready to serve.
