BURGERS
In a large bowl, combine ground beef, breadcrumbs, onions, pickled jalapeño peppers, chipotle purée, cilantro, ground cumin, freshly ground black pepper, and cheese. Divide the mixture into 4 equal portions and form 4 patties.
Place them on a plate, cover with plastic wrap and transfer to the refrigerator for 1 hour. While the burgers are chilling, make the spread.
Preheat barbecue to 500ºF
Place burgers on the barbecue, close the lid and grill for 7 minutes per side. If desired, about 3 minutes before the end of cooking, add a slice of cheese of your choice per burger.
When they're done, spread avocado mixture to the top buns and garnish your burgers to your liking.
AVOCADO SPREAD
In a small bowl, scoop out the avocado and add the lime juice; mash with a fork until smooth. Add sour cream, garlic, hot sauce and freshly ground black pepper; stir until well blended. Transfer the spread to the refrigerator until ready to serve.
