Warm summer temperatures are so nice. We can enjoy our outdoor activities, eat on the patio, sunbathe or simply relax with a book outside. Sometimes though, it goes beyond our comfort level. When the humidity kicks in, we try to find ways to keep cool and hydrated. We attempt to stay in the shade or inside with the AC on as well as eating light and avoiding hot meals and beverages.

In the past, I’ve posted a few alcohol-free summer beverage recipes like my Homemade Lemonade, Palm Springs Date Shake, Orange Julius Copycat, Vietnamese Iced Coffee, Strawberry Milkshake, Agua de Jamaica along with all kinds of different smoothies. Here’s another one to add to the list… my Lemon Iced Tea!

What a simple and yet so refreshing recipe! It takes only the teas steeping time and it’s done… well of course it also needs to be chilled for a few hours. What’s nice about this is it can be adjusted to your liking. If you like yours mild without the strong flavor of tea, steep it for 6 minutes otherwise steep them longer. I like mine around the 8 minute mark. Same with sugar… I like mine with 6 tbsp. but if you prefer yours less or more sweet, adjust accordingly. Many people don’t really enjoy black tea that much therefore Orange Pekoe is another great substitution.

As the title says, there’s lemon in it. I use ½ cup of freshly squeezed lemon juice. Please don’t use anything else than fresh lemons otherwise you’ll be quite disappointed with your Lemon Iced Tea. I have a handy kitchen tip to get the most juice from your lemons so click on this link to find out… Extract the Most Juice from Citrus Fruits

After the beverage is chilled, don’t forget to taste and adjust if necessary. If it needs more sweetness, add some Simple Syrup. I strongly suggest staying away from granulated sugar because it won’t dissolve properly, leaving some grainy bits of sugar at the bottom of your pitcher.

This is a nice recipe! When serving it, add a couple of ice cubes to a highball glass, pour in this refreshing Lemon Iced Tea and garnish with a slice of lemon. Beautiful, flavorful and sure to keep you cool during the summer when the mercury rises above comfortable!
