During the summer, most produce is cheaper to buy therefore I like to take advantage of it by doing a lot of canning. It can be any kind of vegetable or fruit depending on the season like cucumbers, mushrooms, onions, Beets, asparagus, green beans, sweet corn, Blackberries, blueberries, cranberries, Strawberries, peaches, plums, Raspberries, tomatoes, Ginger, Horseradish, and so on…
 
Cucumbers are famous for pickles; gherkins, Dill Pickles, Bread & Butter, brined pickles, Polish pickles such as Polski Ogórki or Senfgurken German pickles. Another delicious way to use up your cucumbers is to make this condiment… Homemade Sweet Relish!
 
This is a must have in your pantry. It goes so well with Hot Dogs, Hamburgers, or as an ingredient in picnic salads, Tartar Sauce or Thousand Island Dressing. It can also be mixed with mayo as a sandwich spread or for Deviled Eggs.
 
When I filmed this video, I did something different than I usually do. I used a Vidalia Chop Wizard to chop my vegetables. It worked well but I prefer them finer so the next time I make my Homemade Sweet Relish, I’ll go back to my food processor.
 
Canning is great because you can enjoy your favorite jams, jellies, fruits, and vegetables all year round. I didn’t show the whole process of canning so if you’re not too sure how to do it, I highly suggest you click on this link… How to do Home Canning. Now do you need to process your jars? Yes and no! If you think you might use it all within a couple of weeks then there’s no need to process them. On the other hand, when jars are processed, they can easily keep for up to 1 ½ years in your pantry… if they last that long!
 
This Homemade Sweet Relish is a flavorful recipe to use up your bounty of cukes. It’s really not that complicated and you can make it as sweet or tart as you want. They also make nice gifts for your friends and family.

Sweet Relish

Homemade Sweet Relish

This is a very tasty and versatile condiment. Use it on hot dogs and hamburgers as well as in tartar sauce, picnic salads, and more...

Servings 7 - 250 ml jars

Ingredients
  

  • 7 cups (about 15 small ones) cucumbers, washed, ends cut off and finely chopped
  • 2 cups white onions, finely chopped
  • 1 cup red peppers, finely chopped
  • 1/4 cup pickling or kosher salt
  • 2 cups white vinegar
  • 3 cups granulated sugar, or to taste
  • 1/2 tbsp. celery seeds
  • 1/2 tbsp. mustard seeds
  • 1/2 tsp. ground turmeric

Directions
 

  • In a large bowl, combine cucumbers, onions, red peppers and salt. Cover the vegetables with water and let them sit for 2 hours.
  • Drain the vegetables in a colander lined with cheesecloth. Rinse well and drain again.
  • Meanwhile, in a large pot over medium-high heat, add sugar and vinegar. Bring to a boil, stirring constantly until sugar is dissolved. Add celery seeds, mustard seeds and turmeric; stir again.
  • Add the drained vegetables, stir, bring back to a boil then reduce the heat to medium; simmer for 10 minutes, stirring occasionally. If there’s foam on the surface, skim it off with a spoon and discard it.
  • Ladle the relish into sterilized jars leaving ½ inch headspace. Wipe the rims, add the lids and screw on the bands. Process jars in a boiling water bath for 10 minutes.
