When BBQ season is here and the weather starts getting warmer, our grill works full time! It can be a nice juicy steak 🥩, a crispy rotisserie chicken, burgers or hot dogs, grilled fish such as tuna or marlin, vegetables especially when I make my Fire Roasted Salsa or Elotes, fruits, etc.
 
Another favorite of ours is kebabs 🍢! I have several delicious recipes on the website such as Shawarma Chicken Kebabs, Yakitori Chicken Skewers, BBQ Beef Shish Kebabs, Creole Shrimp and Andouille Skewers, Shish Tawook, etc. Here’s another one to add to this list… my Hawaiian Teriyaki Shrimp Kebabs!
 
These are totally OMG 🤯! Extremely tasty and very colorful, these perfectly grilled skewers are a great recipe to make this summer! With a beautiful assortment of vegetables, pineapple pieces and shrimp plus my delicious Teriyaki Sauce, this is a beautiful meal everyone will love!
 
This Hawaiian Teriyaki Shrimp Kebabs is pretty straightforward and so easy to make. After threading on the vegetables , fruit 🍍 and shrimp, the skewers are placed on well-oiled grates. They’re cooked between 450ºF to 500ºF for 8 to 10 minutes.
 
When threading on the ingredients, make sure to leave a space in between so the heat can go through and cook them evenly. The same applies with the shrimp 🍤 that has been pierced twice… leave a space in between each end as well.
 
You should have 3 shrimp per skewer. I like to start and finish with a green pepper piece. It’s thick and holds well on the stainless-steel skewer. Stay away from starting and finishing with a piece of onion 🧅 as it’s thin and will fall off during grilling.
 
What makes this recipe stand up in the flavor department is my Hawaiian Style Teriyaki Sauce! Besides this one, I use it on wings or in recipes like Pineapple Teriyaki Chicken, Hawaiian Teriyaki Burgers 🍔, and Teriyaki Beef Noodles.
 
Before cooking down the sauce, it yields 2 cups. To be able to brush on this deliciousness on the kebabs, it has to be reduced down to about ¾ cup. Simply follow the directions but don’t cook it as long; 15 to 20 minutes ⏰ on medium heat should be sufficient. You’ll see when it starts to thicken.

Equipment

  • 4 stainless steel skewers

Ingredients
  

  • 16 pieces green peppers, cut into 1 1/2-inch cubes
  • 16 pieces red peppers, cut into 1 1/2-inch cubes
  • 16 pieces pineapple, cut into 1 1/2-inch cubes
  • 16 pieces red onions, cut into 1 1/2-inch cubes
  • 12 large shrimp or prawns (about 3/4 lb.), peeled, deveined and patted dry
  • 2 to 3 tbsp. canola oil or as needed, to grease BBQ grates tips & tricks
  • 1 Hawaiian Style Teriyaki Sauce recipe, reduced to 3/4 cup see Recipe
  • 2 cups cooked rice, for serving see Recipe
  • 2 tbsp. chopped green onions (green parts only), for garnish

Directions
 

  • Leaving some space in between, thread on green pepper, red pepper, pineapple, red onion, and then a prawn, piercing it twice. Repeat with the same order of ingredients finishing with green pepper.
  • Preheat barbecue to 450-500ºF.
  • Pour oil on a piece paper towel and using tongs, brush the grates.
  • Place the skewers, close the lid and grill for 10 minutes, flipping them every 2 minutes.
  • Four (4) minutes after cooking, brush the kebabs with Hawaiian Style Teriyaki Sauce, flip them, close the lid, and cook them for 2 minutes. Repeat the same steps with brushing and flipping until they’re done.
  • Serve them on a bed of rice and sprinkle on some chopped green onions. Makes 4 skewers.
