I’ve been impressed with Mexican cuisine since my first trip down there way back in the late 80s. I went to Puerto Vallarta with my boyfriend Carlo and came back engaged 💍… well not for too long! A year later, I broke up with him… he wasn’t the one!
 
Anyway, during that trip, I discovered so many amazing dishes 😍. One I couldn’t get enough of was that avocado-based dip that our hotel was serving us along with tortilla chips during “happy hour”. When I got home, I was looking for these fruits to replicate it. Alas, back then, our Canadian grocery stores weren’t selling them.
 
Soon after we returned home though, I heard of Chi-Chi’s Mexican restaurants opening up in different locations. It didn’t take me long before I visited one of them while staying over at my friends in Toronto! When I saw the avocado dip 🥑 on the menu, you bet I ordered it!
 
It took years before I saw them in grocery stores. Of course, I grabbed a few and finally made my Classic Guacamole! This recipe is pretty straightforward. Mash the avocadoes, add lime juice, diced tomatoes 🍅, red onions, garlic, cilantro plus seasonings… done!
 
This Classic Guacamole differs slightly from my husband’s Creamy Spicy Guacamole recipe. His has sour cream in it… mine is dairy free! Besides enjoying it as a dip, both recipes are very versatile and go well with different applications. They can be used for Carne Asada Fries or Avocado Sweet Pea Toast, as a topping for California or Mexican Burgers, spread on bagels 🥯 in lieu of cream cheese, when making Six Layer Chip Dip, etc.
 
As it sits longer, the color of the guac will start turning brown. Although not visually appealing, it’s completely safe to eat 🍴. It’s the enzymes from the fruit getting oxidized in contact with the air. Give it a good stir and enjoy it! The most important thing is to store it in the fridge and it’s good for up to 3 days.
 
Quick and easy to make, it’s a must have! This Classic Guacamole can be used as a dip, a garnish for burgers and sandwiches 🥪, a side for nachos, or for many Mexican dishes. It’s another tasty way to enjoy this fabulous fruit.

Classic Guacamole

Quick and easy to make, this Classic Guacamole is a must have. Use it as a dip, a garnish for burgers, sandwiches or for many Mexican dishes.

Ingredients
  

  • 2 large avocadoes, stones removed, peeled and cut into pieces tips & tricks
  • 1 tbsp. freshly squeezed lime juice tips & tricks
  • 2 tbsp. tomatoes, seeded and finely diced tips & tricks
  • 1 tbsp. red onions, finely chopped
  • 2 large cloves garlic, pressed
  • 1 tbsp. cilantro, finely chopped tips & tricks
  • 1/4 tsp. ground cumin
  • 1/4 tsp. freshly ground black pepper, or to taste (I always use mixed peppercorns)
  • 1/8 tsp. ground Himalayan pink salt, or to taste
  • 1/2 tbsp. hot sauce such as Cholula, or to taste

Directions
 

  • In a bowl, add prepared avocadoes and lime juice; mash them using a fork.
  • Add the remaining ingredients and stir until nicely combined; taste and adjust seasoning if needed.
  • Serve immediately or cover and transfer to the fridge until needed.
