This coming weekend is a busy one for a few reasons. First, we’re having our friends Bob and Gloria over – I miss them so much, can’t wait to see them! Tomorrow it’s my birthday… I’ll be 42 EUR or 46 USD if you prefer, lol! Now if you enjoy golf as much as we do, you know exactly what starts today and goes on until Sunday… that’s right, the Masters!
 
To go down there and see this tournament in person would be a dream come true but in the interim, nothing is stopping us from enjoying the sandwiches they serve at Augusta like Pimento Cheese or this one… the Best Egg Salad Sandwich ever! It might sound cocky but this recipe is so “egg-cellent”! With a mix of fresh ingredients and some seasonings, this finger food is sure to please you and your family. It’s super quick and easy to make and also a great way to use up your Easter Eggs.
 
One ingredient that I add to the eggs after they’re mashed is Miracle Whip – c’mon now, don’t roll your eyes! Just mayo by itself I find boring. By adding Miracle Whip, it gives a little extra zip to the mixture without overpowering it. I also like to season with smoked paprika… it gives some personality to this Best Egg Salad Sandwich!

There’s a fabulous couple who have been subscribers to CF since almost the beginning and they are George and Brenda from Florida – I affectionately call him Geo because we have 3 more George’s in our circle… George (British Columbia), Georgie (Newfoundland) and Coco George (Toronto).
 
During Covid, we did FaceTime with them and would love to meet them in person some day… they’re awesome people! Geo and I have the same birthplace which is Montréal plus the four of us enjoy golfing, fine food and wine. Brenda works in the medical field and is also a talented artist – I can’t wait to see the designer purses she’s been making.

After talking with my husband, Geo decided to surprise him by making a trophy for David’s hole in one he had back on October 21st, 2019. He used 3D printing technology to make it and honestly, look how nice it is! David was so impressed with this gorgeous trophy holding the actual ball he used, it’s proudly displayed on his desk. Once again Geo, we really appreciate your kind gesture making this classy trophy for David… a Million thank-yous for that… ♥

Best Egg Salad Sandwich

This Best Egg Salad Sandwich recipe is one you definitely have to try. With great ingredients, it’s a step up from others you may have had.

Ingredients
  

  • 6 large free-range hard boiled eggs, peeled
  • 3 tbsp. Miracle Whip
  • 3 tbsp. mayonnaise see Recipe
  • 1/2 tbsp. prepared yellow mustard
  • 2 tbsp. green onions, finely chopped
  • 2 tbsp. celery, finely chopped tips & tricks
  • 1/4 tsp. smoked paprika
  • ground Himalayan sea salt, to taste
  • freshly ground black pepper, to taste (I always use mixed peppercorns)
  • 3 lettuce leaves, or as needed
  • 6 slices bread

Directions
 

  • In a medium bowl, break down the eggs before mashing them.
  • Add Miracle Whip, mayo, mustard, green onions, celery, smoked paprika, salt and pepper. Stir well until the ingredients are well blended.
  • Place lettuce leaves on 3 slices of bread. Evenly divide the egg mixture and spoon a third on top of each slice. Place another bread slice on top and serve immediately.
