Angel Eggs on a Cloud
Good morning 🌞! It’s time for breakfast so what are you going to have?
Cereal or Granola, Fruit, Omelet or Quiche, French Toast, Shakshouka, Pop Tarts, Muffins, oatmeal or Bacon & Eggs? Yes, bacon 🥓 and eggs 🍳 sounds good! How about trying something new like Angel Eggs on a Cloud!
I’m pretty sure you’ve never heard of this breakfast item before. If you’re looking at the picture right now, you’re probably thinking – “Wow… cool 😍!” or even, “what is that?”. Would you like to know how to make it?
Lucky for you, a recipe floated down from the clouds ⛅ and I’m here to share this heavenly dish with you today – light and fluffy, golden-brown egg whites with silky smooth, creamy yolks baked to perfection and absolutely delicious!
Okay… this is not one of my original creations. I did see it for the first time on a Facebook video 📽 a while ago. Although I watched it and was inspired, I, unfortunately, can’t give proper credit to the man in the video because I don’t know where he’s from and also couldn’t understand the language spoken (I think it was Ukrainian… not sure 🤔). So what I did was create my own version by adding more ingredients and figured out the cooking method. It took me about 3 tries to get it just right and now I can finally share the Angel Eggs on a Cloud with you.
This is the perfect dish for brunch and a great conversation starter among your guests. I like to serve it with fruits, crispy bacon and English muffins but the choices are unlimited. Looking for a light breakfast/brunch item? These Angel Eggs on a Cloud are definitely a great choice 👼!

Angel Eggs on a Cloud

Ingredients
- 2 large free-run eggs, room temperature
- 1/4 tsp. cream of tartar Footnote #1
- 1 1/2 tbsp. Asiago cheese, grated
- 1 tbsp. Parmesan cheese, grated
- 2 tbsp. chives, chopped, finely chopped tips & tricks
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- smoked paprika, to taste
Directions
- Preheat oven to 450ºF
- Line a baking sheet with parchment paper or a silicone mat; set aside.
- Separate the eggs by putting whites in the chilled mixing bowl of a stand mixer and the yolks in a small individual bowls (*see footnote #2).
- On low speed with a whisk attachment, whip the whites and gradually increase the speed. When the sides start to create bubbles, add cream of tartar. Continue whipping until stiff peaks form. Gently fold in cheeses and chives with a spatula.
- Spoon egg whites into 2 pillows on the prepared baking sheet. With a teaspoon, make a deep well in the center for the egg yolks later on.
- Transfer to the preheated oven and bake for 3 minutes.
- Remove from the heat and add one yolk to each well; season with pepper and paprika. Return to the oven and bake until yolks are just set, 2 ½ to 3 ½ minutes.

Only egg on cloud I saw tartar used..why?
It helps to increase and maintain the egg whites’ volume and texture when whipped. It also increases their tolerance to heat.
