Homemade Pancake Mix
I shake my head when I glance at people’s shopping carts 🛒: fast food, lots of cans, boxed foods, frozen dinners, lettuce in a bag with a dressing packet, etc. I realize we’re all challenged with tight schedules, but spending an extra 30 minutes making a meal from scratch can be a long-term health benefit.
I make almost everything from scratch for a few reasons…
– I find cooking therapeutic.
– I can’t stand the preservatives and chemicals they put in the food therefore it’s much healthier to make from scratch.
– Most of the time, it’s cheaper.
– It tastes much better when made at home 🏡. plus I can tweak the recipes to our liking
When it comes to breakfast food items, very little is bought at the store. I like making my own jams, bread, croissants, bagels, English muffins, granola, and so on. A recipe we enjoy having on the weekends that I make from scratch is my Homemade Pancake Mix 🥞!
What an easy recipe! It’s light and fluffy, plus a delicious reason to get up on a Sunday morning. I like to change the flavor. Instead of using pure vanilla extract all the time, I switch to other flavorful extracts, such as pineapple 🍍, coconut 🥥, rum, maple, etc.
When I mentioned “fluffy”, it’s because this Homemade Pancake Mix is! The secret is to sift all the dry ingredients. Do you have to do that? If you don’t mind heavier pancakes, by all means, skip the sifting step. I’m not a “sifter”, but in some cases, like chiffon, angel food, Génoise, and sponge cakes, sifting will give that extra airiness, making it lighter, just like in this breakfast item.
David has a trick when it comes to cooking pancakes. He waits until the surface is covered with bubbles before flipping them, which is an indication that they’re browned and ready to be flipped. I, on the other hand, lift and check them out. Usually, 2 ½ to 3 minutes per side is plenty to cook them.

Homemade Pancake Mix

Ingredients
- 3/4 cup milk
- 2 tbsp. unsalted butter
- 3/4 cup unbleached all-purpose flour, sifted
- 1/2 tbsp. granulated sugar, sifted
- 2 tsp. baking powder, sifted
- 1/4 tsp. ground Himalayan pink salt, sifted
- 1 large room temperature free-run egg, lightly beaten
- 1/2 tsp. pure vanilla extract Footnote
- 1 1/2 tsp. clarified butter, or more as needed tips & tricks
Directions
- In a small saucepan over medium low heat, add milk and butter. Stir until the butter is melted, about 4 to 5 minutes. Remove from the heat and set aside to cool off to room temperature.
- In a large mixing bowl, sift flour, sugar, baking powder and salt; whisk very well and set aside.
- In a small bowl, beat the egg before adding the extract; mix well. Add the egg mixture to the milk mixture and stir well before adding it to the dry mixture. Whisk until the batter is smooth without over-mixing; let it rest for 15 minutes.
- Add clarified butter to a skillet or griddle over medium-high heat. When it gets hot, ladle on about ¼ cup of batter, and cook for 2 ½ to 3 minutes per side or until brown. Flip and cook the other side. Serve immediately with butter and maple syrup.

Let your batter rest otherwise you’ll end up with flat and tougher pancakes. Trust me, I made that mistake.

My pancakes were a little dense but tasty. I’m not sure what I did wrong.
It sounds like you didn’t let the batter rest before using it. It’s an important step. When it doesn’t have its “resting time”, more than likely, you’ll end up with tougher, flatter, and less fluffy pancakes. I hope it helps. Have a nice afternoon, Kaylee.
