I’ve enjoyed vegetables and fruits ever since childhood. While other kids were being difficult and not eating their veggies, I was the opposite. One of my all-time favorites is beets! I love their taste, color and versatility. I have so many recipes for beets; Pickled Beets, Red Velvet Boost, Quinoa Beet Salad, Orange Glazed Beets, Best Beef Borscht, and many more including my 4 Natural Food Colorings
 
Depending on the recipe, there are a few different cooking methods to use. Beets • Prep & 4 Ways to Cook shows you not only how to cut this vegetable but also a few cooking options to choose from. I enjoy all of them but if I want to use them in a salad, I’ll be using a different cooking method than if I want to simply serve them as a side dish.
 
In this Beets • Prep & 4 Ways to Cook, I talk about the beet greens. Please, pretty please, I’m begging you, don’t throw them away. They are so nutritious! They taste similar to Swiss Chard and can be used in pasta, salads, stews, soups or simply sautéed with onions, garlic, lemon juice, etc. I’ll show you how to store them properly so they can be kept for 2 to 4 days in the refrigerator.
 
Talking about storage, I mention a few ways to keep your beets longer. When wrapped properly, they can last a couple of weeks in your fridge. On the other hand, with all the cooking methods shown in this video, you can make them ahead and either place them in the fridge for up to a week or freeze them for 2 1/2 months.
