The month of June has so much going on; it’s the last month of school for the kids 👧👱‍♂️ before summer vacation, Father’s Day, warm weather, the summer solstice and food festivals. Going to one of these is fun and attracts so many people. One I really enjoy is the Strawberry Festival. There are booths to buy cooked and/or prepared food items, knick-knacks, games, the Ferris wheel 🎡 and other rides 🎢. Sometimes, there’s also entertainment and mascots as well as displays of the star of the festival, which is the strawberry. It’s a fun way to spend an afternoon and bring home some fresh goodies!
 
Now you’re at home and you’ve bought a lot of nice, juicy strawberries 🍓. Of course, the first couple of days, you’ll probably eat the strawberries just as they are, after washing them first. If you don’t, the next logical step is to bake or cook with them soon. Jams, ice cream and pies are a popular alternative use for them. Last year, my crisper was filled with strawberries. I made ice cream – I love that flavor! I also made a delicious Strawberry Shortcake (yum!), a couple refreshing milkshakes and Strawberry Agua Fresca, my Spicy Strawberry Orange Sauce as well as my Strawberry Jam with Orange Zest, an incredible Watermelon Strawberry Smoothie, and add a few fresh ones to my Strawberry Salad 🥗! Still, I had so many of these juicy little guys left! I used some in my smoothie but there were still more and I wasn’t going to waste them – I can’t stand wasting food! So, I decided to think outside of the box for other uses for my strawberries.
 
That weekend, I created a few recipes that I never made before and the results were scrumptious! Here’s one of them… Strawberry Butter 🧈! Yes, you read that right! You won’t believe how delicious this is! The taste is simply delightful and perfect to spread on English muffins, scones, croissants, bagels, biscuits… you name it! Also, there’s a plus to this butter… it freezes remarkably well!
 
As much as strawberries are sweet on their own, when mixing them with butter, the sweetness diminishes. What I like to add to my Strawberry Butter is sugar but fine sugar. Strawberry Butter

Strawberry Butter

A delicious spread for bread, biscuits, muffins, etc. Strawberry Butter is a great way to use fresh strawberries to brighten up your morning!

Ingredients
  

  • 1 cup (2 sticks) unsalted butter, room temperature Footnote
  • 1/4 cup powdered sugar tips & tricks
  • 1 small pinch ground Himalayan pink salt
  • 1/2 cup fresh strawberries, washed, dried, hulled and coarsely chopped tips & tricks
  • 1/4 tsp. freshly squeezed lemon juice, or more if needed tips & tricks

Directions
 

  • In a bowl, combine butter, powdered sugar and sea salt.
  • Using a hand mixer with the whisk attachment on, process for 4 to 5 minutes to incorporate enough air in the butter
  • Switch whisk attachment for beaters and process for 5-6 minutes. Taste and adjust if needed.
  • Spoon the strawberry butter into a 9 cavity-narrow silicone mold and transfer to the freezer until hard.
  • Unmold the butter squares and transfer to a re-sealable freezer bag or container; store in the freezer until needed.

Footnote: Make sure all the ingredients are at room temperature.
