Strawberry Butter

- 1 cup (2 sticks) unsalted butter, room temperature Footnote
- 1/4 cup powdered sugar tips & tricks
- 1 small pinch ground Himalayan pink salt
- 1/2 cup fresh strawberries, washed, dried, hulled and coarsely chopped tips & tricks
- 1/4 tsp. freshly squeezed lemon juice, or more if needed tips & tricks
In a bowl, combine butter, powdered sugar and sea salt. Using a hand mixer with the whisk attachment on, process for 4 to 5 minutes to incorporate enough air in the butter
Switch whisk attachment for beaters and process for 5-6 minutes. Taste and adjust if needed.
Spoon the strawberry butter into a 9 cavity-narrow silicone mold and transfer to the freezer until hard.
Unmold the butter squares and transfer to a re-sealable freezer bag or container; store in the freezer until needed.
Footnote: Make sure all the ingredients are at room temperature.
