I love pizza, you love pizza, we all love pizza 💖 (use your best Italian accent here, it sounds awesome) and with over 3 Billion pizzas sold per year in the U.S. alone, holy moly that’s a lot of dough!
 
Life can get busy and with hectic schedules, we don’t always have the time to make pizza dough. Did you know that in about a 1/2 hour you can have a delicious homemade pizza 🍕 straight from your kitchen using a few simple ingredients and leftovers from your fridge? Yes, that’s right and it’s super easy too!
 
Traditionally, pizza is made with dough and then sauce is spread over it with a bunch of goodies on top. The one I’m sharing with you today is similar to a traditional pizza except for one thing… I use tortillas for my crust. Why? Because I hate 😣 wasting food and I love creating dishes from leftovers. This is how my Chipotle Chicken Tortilla Pizza was developed!
 
The other night, we had homemade Fajitas. In our household, as much as we love bread/dough/buns/etc. 🥖🍞, we don’t eat them every day and more often than not, we end up putting them in the freezer. So every time I buy any kind of bread item, I try to be savvy and think ahead beyond one simple meal. So now you know why this idea of using tortillas for pizza comes from.
 
I’ve tried different techniques in the past and I finally came up with my delish “un-soggy” super crispy ultra-thin tortilla pizza – what a mouth full 🙄! The trick here is to bake it first and then add the good stuff on top. By baking it a few minutes on each side, you prevent this ultra-thin crust from absorbing any moisture from the sauce and toppings. When you spread the sauce over after baking it, just be gentle and handle it with looove!
 
As I mentioned in the intro of my video 🎥, the cool reason for making a pizza is you get to use up your leftovers and just like a blank canvas, you (subject to what’s in your fridge) are the creator of your pizza masterpiece! If you shredded chicken and still have some left, here’s a way to use it up as a topping for your pie!
 
This Chipotle Chicken Tortilla Pizza recipe that I’m sharing with you is just a basic idea of what you can do although I have to admit that this one is pretty darn good! Just imagine the combination of Spicy Chipotle Mayo mixed with your favorite BBQ sauce and then pineapple chunks 🍍… do you see where I’m going with this? Spicy, sweet and salty in one bite… Oh boy, things cannot get much better than this can they?

Chipotle Chicken Tortilla Pizza

Ingredients
  

  • 2 large flour tortillas
  • 2-3 tbsp. olive oil, or more as needed tips & tricks
  • 4 tbsp. chipotle mayo tips & tricks
  • 2 tbsp. BBQ sauce of choice, or more to taste
  • 1/2 large red pepper, finely chopped
  • 1/2 large orange pepper, finely chopped
  • 1/2 large jalapeño pepper, seeded, ribs removed and minced
  • 1/4 medium red onion, finely chopped
  • 2 large Roma tomatoes, seeded and cubed tips & tricks
  • garlic salt, to taste
  • freshly ground black pepper, to taste (I always use mixed peppercorns)
  • 1 large chicken breast, poached and shredded tips & tricks
  • 2/3 cup pineapple chunks
  • 1 cup Mexicana cheese, grated
  • 1 cup Monterey Jack cheese, grated
  • 12 small black olives, sliced
  • 1/2 tbsp. dried basil, or to taste

Directions
 

  • Preheat oven to 375ºF.
  • Place tortillas on a baking sheet and using a pastry brush, lightly spread each side of the tortilla with olive oil.
  • Transfer to the preheated oven and bake for 8 to 10 minutes, flipping over halfway through cooking time. The tortillas should be golden and crisp when done.
  • Spread on chipotle mayo then top with peppers, onion, tomato and seasonings. Add shredded chicken and then cheeses, olives and basil.
  • Return to the preheated oven and bake for 8 to 10 minutes or until cheeses have melted. Transfer to a cutting board, slice and serve.
