freshly ground black pepper, to taste (I always use mixed peppercorns)

2/3cuppineapple chunks
1 cupMexicana cheese, grated
1cupMonterey Jack cheese, grated
12smallblack olives, sliced
1/2tbsp.dried basil, or to taste
Directions
Preheat oven to 375ºF.
Place tortillas on a baking sheet and using a pastry brush, lightly spread each side of the tortilla with olive oil.
Transfer to the preheated oven and bake for 8 to 10 minutes, flipping over halfway through cooking time. The tortillas should be golden and crisp when done.
