Sweet Chili Chicken Bites
As I’ve been cooking up a storm at home due to Club Foody, I absolutely need to go out to restaurants once a week and let someone else cook, serve and clean. Yes David helps me a lot but still, I do the majority of the work, constantly having a camera between me and the preparation of the meal… not very convenient.
When we go out, I’m in no rush and like to order an appetizer. I find it social and it also calms our hunger before ordering the main course. I do the same when family and friends come over. It doesn’t have to be complicated. It can be a salad, small tapas, soup, bread or other light fare.
There’s a dish that we enjoy a lot and it’s my Sweet Chili Chicken Bites! It’s absolutely delicious and very easy to make! Double dredged, the pieces are crispy on the outside and tender & juicy on the inside. It’s a tasty appetizer recipe to have in your folder although it can also be served as a main course along with some steamed white rice…
What makes this dish so mouthwatering is the sauce. I use my homemade Sweet Chili Sauce that I posted a couple of months ago. This is a great condiment that I use often for different recipes like Sweet & Sour Pineapple Pork, Chinese 5 Spice Spare Ribs, Triple Chili Wing Sauce, Vietnamese Summer Rolls, and others.

Sweet Chili Chicken Bites

Ingredients
- 1 lb. chicken breasts, cut into bite sized pieces
- 3/4 cup unbleached all-purpose flour
- 1/4 cup cornstarch
- 1 tsp. baking powder
- 1/2 tsp. garlic powder
- ground Himalayan sea salt, to taste
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- 2 large free-run eggs
- 1/4 cup milk
- canola oil for frying, as needed tips & tricks
- 3/4 cup sweet chili sauce, or as needed see Recipe
- 1/2 tbsp. sesame seeds, for garnish
- 1/2 tbsp. chopped green onions, for garnish
Directions
- In a mixing bowl, add flour, cornstarch, baking powder, garlic powder, sea salt and freshly ground black pepper. Whisk until the ingredients are well blended before transferring the flour mixture to a shallow container.
- In another shallow container, beat eggs and milk together.
- Working in batches, dredge the chicken pieces in the flour mixture until well coating. Shake off any excess flour and dip them in the egg mixture; toss to coat. Return the chicken pieces back to the flour to dredge them a second time – this will make them crispier.
- In a skillet over medium high heat, add oil and bring the temperature to 375ºF/190ºC. Working in batches, carefully add the coated chicken pieces and fry them until nicely brown, about 3 to 4 minutes, flipping them a couple times.
- Transfer them to a plate or baking sheet lined with paper towels to absorb any excess oil; set aside while frying the others.
- Transfer them to a large bowl and pour sweet chili sauce over; stir until well coated. Sprinkle on the sesame seeds and stir once again until evenly distributed. Before serving, sprinkle on some sliced green onions.
