All my life, I’ve been a salad lover, and it shows! On the website 💻, there are over 50 recipes to choose from, and they just keep coming. It can be anything from a Classic Cobb Salad to Pittsburgh Steak Salad, Tabbouleh, Salade Niçoise, Buffalo Chicken Salad, and so on.
 
September is finally here, and one activity David and I enjoy doing during this month is to visit our local orchards. Yes, I know… the supermarkets sell apples 🍎 all year round, but it’s not the same. I like to encourage the growers by buying directly from them.
 
When we return home, I like making recipes using different varieties such as Gala, Fuji, Gravenstein, Granny Smith 🍏, etc. It can be Apple Turnovers, Apple Betty, Stuffed Pork Tenderloin, Apple Cinnamon Bread, Apple Cheese Soufflés, and others.
 
Another one I enjoy making as well is my Spinach Apple Salad! Light, fresh, and healthy, this tasty dish is perfect for lunch or as a side dish along with grilled chicken 🐓 or pork. Like most salad recipes, it takes less than 30 minutes to make.
 
You can use your preferred vinaigrette, but I highly suggest you try the one that goes with it 😉. I use the basic foundation from my Easy Balsamic Vinaigrette; then from there, I add other ingredients according to the salad recipe.
 
We eat with our eyes first, and the last thing I want to see in my Spinach Apple Salad is my produce turning brown due to oxidation. I add some freshly squeezed lemon juice 🍋 to both my apple and avocado cubes, and gently toss to coat.
 
An ingredient that I used often until the USA/Canada tariffs were implemented back in February, was Cotija cheese. Depending on where you live, you might not be able to find any, so use feta cheese, but make sure to rinse it under cold water 💦 to remove the salty brine.
 
I use raw red onions. Although ideal for salads due to their milder and sweeter flavor, they can still be harsh and strong in taste 😣. To remedy this, I have a great tip that helps to remove the harshness. Click here to find out… How to Remove Bitterness from Onions
 
After the salad 🥗 is tossed and ready to be enjoyed, I highly recommend shaking the Balsamic Vinaigrette before using it, as the oil will more than likely be separated from the other ingredients. Give it a good shake-shake-shake and pour it over.

With a tasty combination of ingredients, this Spinach Apple Salad is easy to make and healthy too! It’s a great recipe to add to your folder.

Ingredients
  

VINAIGRETTE

  • 2 tbsp. extra-virgin olive oil tips & tricks
  • 2 tbsp. balsamic vinegar
  • 2 tbsp. granulated sugar
  • 1 tsp. Dijon mustard
  • ground Himalayan pink salt, to taste
  • freshly ground mixed peppercorns, to taste

SALAD

  • 1 large apple such as Royal Gala, washed, cored and cubed
  • 3 to 4 tbsp. freshly squeezed lemon juice, or as needed and divided tips & tricks
  • 1 large avocado, stone removed, peeled and cubed tips & tricks
  • 6 oz. baby spinach
  • ½ cup Cotija cheese (substitute feta cheese), crumbled
  • ¼ cup red onions, finely chopped tips & tricks
  • ½ cup toasted walnuts, roughly chopped

Directions
 

  • In a small container, combine all the vinaigrette ingredients. Place the lid and shake vigorously until well blended. Transfer to the fridge for at least 30 minutes or until ready to use.
  • Place apple and avocado cubes in two different bowls before drizzling lemon juice; toss to coat.
  • To assemble the salad…
    In a large bowl, add baby spinach, apple and avocado cubes, Cotija cheese, red onions and toasted walnuts. Gently toss the ingredients until nicely mixed.
  • Shake vinaigrette before pouring over the salad. Serve immediately.
