VINAIGRETTE
- 2 tbsp. extra-virgin olive oil tips & tricks
- 2 tbsp. balsamic vinegar
- 2 tbsp. granulated sugar
- 1 tsp. Dijon mustard
- ground Himalayan pink salt, to taste
- freshly ground mixed peppercorns, to taste
SALAD
- 1 large apple such as Royal Gala, washed, cored and cubed
- 3 to 4 tbsp. freshly squeezed lemon juice, or as needed and divided tips & tricks
- 1 large avocado, stone removed, peeled and cubed tips & tricks
- 6 oz. baby spinach
- 1/2 cup Cotija cheese (substitute feta cheese), crumbled
- 1/4 cup red onions, finely chopped tips & tricks
- 1/2 cup toasted walnuts, roughly chopped
In a small container, combine all the vinaigrette ingredients. Place the lid and shake vigorously until well blended. Transfer to the fridge for at least 30 minutes or until ready to use.
Place apple and avocado cubes in two different bowls before drizzling lemon juice; toss to coat. To assemble the salad…In a large bowl, add baby spinach, apple and avocado cubes, Cotija cheese, red onions and toasted walnuts. Gently toss the ingredients until nicely mixed. Shake vinaigrette before pouring over the salad. Serve immediately.
