Nacho Cheese Sandwich
Mexican cuisine is so yummy! Its foods are packed with so many flavors. I think of tortilla soup or albóndigas • mexican meatball soup, tamales, enchiladas, tacos 🌮, chiles rellenos, and many more…
There’s also nachos. I love this delicious dish. It’s so flavorful that I decided to put a twist on it! Enjoy my Nacho Cheese Sandwich 🥪!
Here in Canada 🍁, Mexican food became more popular in the late 70s’. Restaurants like Chi-Chi’s brought out our culinary curiosity. We were all ready to try something new, something that we weren’t accustomed to. I remember that fajitas were my favorites after enjoying a delicious plate of nachos as an appetizer along with a tall margarita.
Nachos are very tasty and it’s a dish a lot of people really enjoy. Is it the tortilla chips with all the goodies on top that make nachos such a great combination? I’d say yes until I decided to put a twist on my favorite Mexican dish, creating my Nacho Cheese Sandwich. I use slices of bread 🍞 as my food vessel instead of the tortilla chips to hold all the deliciousness. Honestly, it worked out pretty well!
This sandwich has the same awesome ingredients that you would find in a nacho dish… well except for the tortilla chips although the idea 💡 did come to me to add some in the sandwich. I thought it would be too crunchy! I use my Pickled Jalapeños recipe along with my Homemade Old El Paso Taco Seasoning. When it comes to bread, I can’t resist using fresh baked bread such as my Artisan Bread… Hey, I’m a true foody!
Next time you’re craving this popular Mexican dish and run out of tortilla chips, don’t worry, this Nacho Cheese Sandwich is the perfect solution! It’s very filling and certainly a meal on its own that will satisfy anyone 😊. As I’ve mentioned often, sandwiches should not be underrated and this one is no exception.

Nacho Cheese Sandwich

Ingredients
- 1/3 cup Roma tomatoes, seeded and chopped
- 1/4 cup green onions, finely chopped
- 1 lb. (500 g) lean ground beef
- 1 tbsp. taco seasoning mix see Recipe
- 1/4 cup pickled jalapeño peppers (about 20), finely chopped see Recipe
- 8 thick slices bread such as French, Artisan or Italian see Recipe
- light sour cream to spread, as needed
- 2 cups grated sharp Cheddar cheese, divided
- few drops hot sauce of your choice, such as Cholula® *optional
- 1 medium avocado, peeled, pitted and cut in small pieces tips & tricks
- 1 cup Pepper Jack cheese, grated
- 1/4 cup salsa see Recipe
- 1 to 2 tbsp. cilantro, chopped tips & tricks
- butter to spread, as needed
Directions
- In a small bowl, combine tomatoes with green onions; stir well and set aside.
- In a large saucepan over medium heat, add ground beef and cook halfway before adding taco seasoning; stir well.
- When the meat is almost cooked, add pickled jalapeños and gently combine.
- Remove from the heat and transfer to a colander to drain the fat very well to prevent the sandwich from getting soggy.
- Preheat oven to broil.
- Line a baking sheet with foil, set aside.
- To assemble the sandwich...Working on only 4 slices of bread, spread a thin layer of sour cream and then add about ¼ cup of Cheddar cheese on top.
- Distribute the beef mixture evenly on top of the cheese. If you want it spicier, add a few drops of hot sauce over the meat.
- Place avocado pieces on top of the meat followed by a ¼ cup of Pepper Jack cheese on each. Spoon the tomato mixture over evenly and to hold everything in place, add another ¼ cup sharp Cheddar cheese on top.
- Place sandwiches on the prepared baking sheet and transfer to the oven under the broiler with the rack positioned about 8-inches from the top.
- When they get nice and brown, remove from the heat, carefully flip them over and butter the other side with a thin layer of butter. Return to the oven and broil until golden brown.
- Remove from the oven and serve immediately.
