My mother is at the age where she doesn’t really cook anymore. She buys 🛒 more and more pre-packaged prepared food. She does the same thing with desserts. I do understand her; she’s tired and eats by herself. I wish we lived closer so she could enjoy a nice home-cooked meal regularly.
 
Last fall, when I moved her to a senior residence, she made 👵 me something I went crazy for… Easy Brownie in a Mug! She mixed all the ingredients in a coffee mug, placed it in the microwave, processed it for 1 minute, and then continued to cook at 10-second intervals until the batter was set!
 
Sometimes I have a craving while David doesn’t, or vice versa. This incredibly easy recipe is perfect for a single-serving dessert when those cravings occur! It’s probably the quickest sweet treat you can make 👩‍🍳👨‍🍳 from scratch.
 
This decadent Easy Brownie in a Mug hits the spot, plus it’s ready in no time! It has that gorgeous texture of my homemade Fudgy Brownie recipe: soft and chocolatey! Another plus about making this single sweet treat is it’s all done in a mug… clean up 🧼 is a breeze!
 
First, the butter 🧈 is melted directly in the mug – for 30 seconds -, and if there are some unmelted pieces, simply swirl the cup. Flour, sugar, cocoa powder, espresso powder, and salt are added to it. The ingredients are somewhat combined together. It won’t be perfectly done…at first.
 
Milk is warmed up in the microwave but for only 10 seconds – alright, there are two things to clean: the mug plus the cup for the milk 🥛. After being poured into the mixture, there are also chocolate chips that go in along with pure vanilla extract. This time, it’s easier to mix the ingredients until well blended.
 
Let’s indulge!
It’s optional, but I like adding about a ½ tablespoon of dark chocolate chips 🍫 on top before the mug goes in the microwave. There are other options. Peanut butter chips can be substituted, or even chopped nuts such as walnuts. Last time, I added a dollop of Nutella, and it was yummy!
 
After placing the mug in the microwave, it’s processed for 1 minute on “High”. After 60 seconds are over, it continues cooking in 10-second intervals until the batter is set. Not all microwaves are the same, so you’ll have to be the judge 👩‍⚖️👨‍⚖️.
 
Let’s backtrack…
There are instant espresso granules that go into the mixture. Adding either coffee or espresso powder helps to intensify the chocolate flavor without making the brownie taste like coffee ☕. The bitterness of coffee or espresso cuts through the fat, making this dessert more “chocolatey”.
 
Besides enhancing the flavor, there’s another great reason to add some to the chocolate batter. It gives this dessert a boost of antioxidants, as both chocolate and coffee are high in flavonoids. It doesn’t need a lot to make an impact while providing a delicious balance of richness 🥰.
 
Here are a few points I would like to highlight…
I suggest using a shorter, wider mug instead of a tall one so the batter cooks evenly. Like any cake batter, don’t overmix 🥄 because you’ll end up with a tough brownie. If the center of the brownie looks a little soft, keep in mind it will continue baking after the mug is removed from the microwave.

Ingredients
  

  • 5 tbsp. unsalted butter, melted
  • 6 tbsp. unbleached all-purpose flour
  • 5 tbsp. brown sugar
  • 4 tbsp. unsweetened cocoa powder
  • 1/2 tsp. instant espresso powder
  • 1/4 tsp. ground Himalayan pink salt Footnote
  • 1/4 cup milk, lukewarm
  • 1/2 tsp. pure vanilla extract
  • 1 1/2 tbsp. dark chocolate chips, divided

Directions
 

  • In a 10 to 12-ounce microwave-safe coffee mug, add melted butter, flour, brown sugar, cocoa powder, instant espresso powder, and salt.
  • Stir until somewhat combined.
  • Pour in lukewarm milk and add vanilla extract, and 1 tbsp. chocolate chips; stir until the ingredients are nicely blended.
  • Sprinkle ½ tbsp. dark chocolate chips on top, if desired.
  • Transfer to the microwave and process on “high” for 1 minute. Continue cooking in 10-second intervals until the batter is cooked.
  • Allow to cool for a couple minutes before adding a scoop of vanilla ice cream.
