Cornflake Crusted Fish
Let’s not kid ourselves… We waste more than ever! From electronics 🎮, appliances, to water, gas, oil, etc., we create tons of waste and it’s not getting better. The amount of plastic pollution has increased exponentially – from 2.3 million tons in 1950 to 448 million by 2015 expected to double by 2050!
When it comes to food, did you know that one-third of it around the globe 🌎 is wasted every year! From that number, there’s about 22% that comes from households while there are over 800 million people worldwide who are experiencing hunger. That’s extremely sad 😥, don’t you agree?
As we take a moment to look at our previous generations (grandparents, great-grandparents and beyond), they were salvaging as much as they could. Throwing away food was unacceptable. They appreciated it and respected it just like people do these days with their iPhone or cars 🚗.
I salvage as much as I can. Is it the fact that I grew up as a Catholic? Perhaps but bottom line is why waste it when it costs so much to buy food and the prices just keep going up 📈! A recipe that reflects my obsession of using nearly everything is my Cornflake Crusted Fish!
When we get to the bottom of a box of cereal or a bag of chips, there are always crumbs leftover. Most everyone will throw them out as no one wants to eat them. Using these little morsels can enhance many proteins like the rock fish 🐡 I use in the video although halibut, cod, tilapia or snapper are other delicious options.
This Cornflake Crusted Fish is so delicious! With added seasonings, this recipe turns your plain Jane fish into a delicious meal! I do the same with Doritos or even tortilla chips. I make my Dorito Chicken Casserole or my Taco Beef Pie. I use tortilla chips for my Migas or a nice topping for salad 🥗 or casseroles.
We, and the generations to come, should reevaluate the importance of food by salvaging as much as we can. This tasty Cornflake Crusted Fish is just a small example of what we can do. It’s a quick and easy recipe and a flavorful way to elevate your protein without wasting your leftover crumbs… 😉

Cornflake Crusted Fish

Ingredients
- 2 cups cornflake, crushed
- 1/3 cup unbleached all-purpose flour
- 1/2 tsp. Old Bay seasoning see Recipe
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 tsp. ground Himalayan pink salt, or to taste
- 1/2 tsp. freshly ground black pepper, to taste (I always use mixed peppercorns)
- 2 large free-range eggs, beaten
- 1 lb. (4 4-oz. each) fish fillets (tilapia, rockfish, halibut, cod, etc.), patted dry
Directions
- Preheat oven to 400ºF and line a large baking sheet with parchment paper; set aside.
- Place cornflakes in a large re-sealable plastic bag, close it and use a rolling pin to crush; set aside.
- In a shallow dish, place flour, Old Bay seasoning, garlic powder, onion powder, salt and pepper; mix well.
- In the second shallow dish, add the eggs. In the third shallow dish, place the crushed cornflakes.
- Working with one fillet at a time, dredge it in the flour mixture and shake off any excess. Dip into the eggs, letting the excess drip off and then transfer to the cornflakes, coating the fish by pressing down to adhere.
- Place the coated fillets on the prepared baking sheet and lightly spray with cooking spray.
- Transfer to the preheated oven and, depending on the thickness of the fillets, bake for 18 to 20 minutes or until the internal temperature reaches 145ºF.

You’re welcome Lisa 😊. That’s great! Making breads 🍞 is not complicated. May I suggest starting with banana bread then moving on to Focaccia and Artisan Bread… both are pretty easy to make 👩🍳. Enjoy your day 🌞
