David and I like steaks! They can be striploin, ribeye, T-bone, or tenderloin… my ultimate favorite! We open a nice bottle of red wine, put some soft jazz music 🎶 on, steam some vegetables and mash the potatoes. It doesn’t matter which season it is, we enjoy them all year round.
 
Depending on how we feel or the cut of meat, we might pair it with a nice sauce. There are a few to choose from like Sauce Robert, Peppercorn Sauce, Marchand de Vin which is a red wine 🍷 sauce reduction, Chimichurri, Béarnaise, Salsa Verde, and others.
 
Another one that is incredibly amazing with steaks is this Classic Mushroom Sauce! This sumptuous retro sauce is excellent for this protein! Although it pairs marvellously with beef, nothing’s stopping you from using it with pork 🐖, lamb 🐏, or chicken 🐓.
 
This sauce is beautiful! It has several layers of flavor. After sautéing the mushrooms in butter 🧈 then adding garlic and thyme leaves, there’s that rich Basic Brown Sauce that goes in. Many out there use heavy cream but if you want deep, bold flavor for this Classic Mushroom Sauce, this is the way to go.
 
There are also two other ingredients that compliment the sauce which are sherry and black truffle oil. Now let’s talk about the elephant 🐘 in the room… truffle oil!
 
Is the oil legit? 🤔
No, absolutely not unless the label stipulates “aroma naturale di tartufo” which translates to “truffle natural aroma”! The manufacturers mimic the aroma of the fungi 🍄 by using synthetic ingredients such as 2,4-dithiapentane. I understand why most chefs despise it as it tastes like a bad chemical version of truffles.
 
Last Christmas 🎄, someone gave me a little piece of black truffle after vacationing in Italy. I finely sliced the truffle into a small jar and added salt. Then I poured in a flavorless oil before transferring it to the fridge. A couple weeks later, it was ready to use. I recently finished the oil and now I need to get more!

This Classic Mushroom Sauce recipe is very tasty and compliments steaks incredibly well! It’s another amazing sauce to add to your folder…

Ingredients
  

  • 3 tbsp. butter
  • 3 cups (about 8 oz.) button mushrooms, washed and sliced
  • freshly ground black pepper, to taste (I always use mixed peppercorns)
  • 3 large cloves garlic, pressed
  • 1 tsp. dried thyme leaves
  • 2 1/2 cups Basic Brown Sauce see Recipe
  • 2 tbsp. sherry
  • 1/2 tbsp. Worcestershire sauce
  • 1/2 tsp. black truffle oil (the real stuff)

Directions
 

  • In a medium skillet over medium heat, add butter.
  • When it starts sizzling, add mushrooms and season with freshly ground black pepper. Toss to coat and sauté until softened, about 5 minutes.
  • Add pressed garlic and sauté for 1 minute.
  • Add thyme and Basic Brown Sauce. Stir well, bring to a boil before reducing the heat to medium-low; simmer gently for 15 minutes.
  • Add sherry, Worcestershire sauce and truffle oil. Stir well and cook for another 5 minutes; taste and adjust seasoning before serving.
