Who wants to spend a lot of time in the kitchen cooking when it’s hot outside? Certainly not me! I use the barbecue and if I have to cook anything in the kitchen, it has to be fast. There’s a vast variety of “less than 30 minute” recipes that I’ve already posted like Baked Salmon with Dill Sauce, Croque-madame, Steak Oscar, Cauliflower Fried Rice, Salade Lyonnaise, Veal Marsala, Maple Ginger Scallops, etc.
 
When it comes to chicken, I have so many to choose from: Sweet Chili Chicken Bites, Cashew Chicken, Club Sandwich with Chipotle Mayo, Japanese Chicken Soba Noodles, Chicken (or Turkey) à la King, Chicken in Creamy Jalapeño Cheese Sauce, Chicken Chop Suey, Orzo with Chicken & Asiago, and many more including this featured one… Chicken Nuggets!
 
Yeah, yeah, you can go to McDonald’s and order some… I know, it’s faster but if you want to make good quality ones packed with deliciousness, this is the recipe! With a flavorful batter, this dish can be made in less than 25 minutes. The prepping is what takes time. After your mise en place is done, cooking takes only 4 minutes, that’s all!
 
I prefer my Chicken Nuggets to any fast food chains out there! My batter is so tasty. It’s made with great ingredients like seasoned Panko breadcrumbs, hot sauce, smoked paprika, garlic & onion powder, and others. Also, I know my meat is freshly cut and hasn’t been sitting there for a while… that alone gives me a good reason to stay away from those food chains and make them at home.
 
These Chicken Nuggets is one of my go-to recipes especially if I’m running out of time. Served with homemade French Fries and my delicious Honey Mustard Dipping Sauce, this is a great meal that everyone in your family will enjoy… If you enjoy McDo, I have another recipe that is better than theirs as well and it’s my homemade Filet-O-Fish Sandwich!

Chicken Nuggets

Chicken Nuggets

With a nice flavorful coating, these Chicken Nuggets are a family favorite. It’s a quick and easy dish to make and everyone loves it.

Ingredients
  

  • 1 cup vegetable oil, for frying or as needed tips & tricks
  • 1 cup seasoned Panko breadcrumbs, ground
  • 1/2 cup seasoned Panko breadcrumbs
  • 2 large free-range eggs, beaten
  • 1 tbsp. milk
  • 1/2 tsp. hot sauce such as Cholula
  • 1/2 cup unbleached all-purpose flour
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. smoked paprika
  • 1/2 tsp. ground Himalayan sea salt, or to taste
  • 1/2 tsp. freshly ground black pepper, or to taste (I always use mixed peppercorns)
  • 2 large skinless boneless chicken breasts, cut into 1-inch pieces

Directions
 

  • In a shallow skillet, heat the oil on medium heat until it reaches 375ºF/190ºC.
  • In a shallow dish, add breadcrumbs (both ground and coarse) and stir to mix; set aside
  • In another shallow dish, add beaten eggs, milk and hot sauce; stir and set aside.
  • In a large re-sealable plastic bag, add flour, garlic, onion, paprika, salt and pepper. Close the bag and shake it until the ingredients are well blended.
  • Working in batches, place the chicken pieces in the bag, close and toss to coat.
  • Transfer the coated pieces to the egg mixture and then the breadcrumbs, tossing to coat. Gently shake off any excess coating before placing them on a plate while working with the others.
  • Preheat oven to 170ºF/77ºC.
  • Working in batches, add the chicken pieces to the oil and fry until golden brown, about 3 to 4 minutes.
  • Using a spider strainer, transfer to a baking sheet lined with parchment paper with a wire rack sitting on top.
  • Transfer the fried ones to the preheated oven to keep them warm while frying the others.
