How did I come across this amazing Pakistani dish called Chicken Chapli Kebab? From my friend Tony. He wasn’t really a home cook but his mother 👸 was and that is how I got my first taste of this incredible kebab!
 
Chicken Chapli Kebab is packed with flavor! It’s on the spicy side but not that extreme although a pretty fair amount of red pepper flakes and cayenne pepper are added to this recipe. Of course, it always depends on your tolerance to “spicy” 🥵 and you can always adjust the amounts.
 
Talking about spice there’s one that is not very popular in Western culture 🌎 but it should be because besides being an amazing addition in recipes, it also has some great medicinal benefits. It’s called “ajwain”. First let’s start with the culinary aspect of it.
 
– Ajwain can be purchased 🛒 as a seed or powder. When it’s whole, it looks similar to fennel, caraway or cumin seeds. It tastes somewhat bitter and has a flavor comparable to oregano and anise plus it smells similar to thyme.
– From the medicinal aspect of this herb, it has great benefits for stomach disorders. Added to boiled water, it can calm abdominal pain and colic, reduce bloating, flatulence and diarrhea, and help with indigestion. This is definitely a naturally healthy 💚 ingredient to have around for these situations…

Chicken Chapli Kebab

With a beautiful combination of ingredients, herbs and spices, this Chicken Chapli Kebab recipe is a delicious way to enjoy chicken!

Ingredients
  

  • 2 large chicken breasts, ground tips & tricks
  • 1 cup white onions, chopped
  • 1 cup tomatoes, seeded and diced
  • 1/4 cup cilantro, chopped tips & tricks
  • 1 tbsp. fresh mint, chopped tips & tricks
  • 1 can (4 oz.) diced green chilies
  • 1 tbsp. fresh ginger, minced
  • 3 large cloves garlic, pressed
  • 1/4 cup chickpea flour aka gram or garbanzo flour
  • 1/2 tbsp. red pepper flakes, or more to taste
  • 1/2 tbsp. ground cumin
  • 1/2 tbsp. ground coriander
  • 1 tsp. garam masala
  • 1/2 tsp. ajwain powder
  • 1/2 tsp. cayenne pepper
  • 1/2 tsp. ground Himalayan pink salt
  • 1 large free-run egg
  • 3 to 4 tbsp. canola oil, or as needed tips & tricks
  • lemon wedges, for garnish
  • fresh chopped parsley, for garnish tips & tricks

Directions
 

  • In a large bowl, combine ground chicken, onions, tomatoes, cilantro, mint, diced green chilies, ginger, garlic, chickpea flour, red pepper flakes, cumin, coriander, garam masala, ajwain powder, cayenne pepper, salt and egg. Mix until the ingredients are well blended.
  • Cover with plastic wrap and refrigerate for 1 hour.
  • In a large skillet over medium heat, add oil.
  • Form patties and gently place them in hot oil; cook for 7 minutes or until golden brown. Carefully flip the patties over and cook for 5 to 6 minutes or until golden brown.
  • Transfer onto a plate lined with paper towel to absorb any excess oil.
  • When it’s time to serve, drizzle lemon juice over the kebabs and sprinkle on fresh chopped parsley.
  • Serve with sliced onions and tomatoes with naan or flatbread.
