Caribbean Jerk Rotisserie Chicken
Before the warmer months arrive, David and I try to choose the first few recipes we’ll be making on the barbecue 🔥! It’s really not obvious as we have so many amazing ones like Chipotle Stuffed Bronto Burgers, BBQ Beef Shish Kebabs, Grilled Marlin Steaks, Lamb Kofta with Yogurt Sauce, just to name a few…
When it comes to chicken 🐓, it’s still a hard choice. There’s Peri Peri Chicken, Chicken Boti Kebabs, Huli Huli Chicken, Beer Can Chicken, California Burgers, Gai Yang (Thai Grilled Chicken), Rotisserie Chicken… Wait a second… yeah, here’s another incredible one… my Caribbean Jerk Rotisserie Chicken!
This recipe is ridiculously simple! With only a few ingredients, this chicken is loaded with flavor from the Islands! With a gorgeous homemade rub along with a delicious sauce for basting, you definitely want to make it this summer 🌞. It takes about 1:15 to 1:30 hours to grill depending on the size, and here’s a really tasty chicken to enjoy!
To make this Caribbean Jerk Rotisserie Chicken, you need to make a couple ingredients first. There’s my Jamaican Jerk Seasoning that is used for the rub and then this incredible condiment… Caribbean BBQ Sauce which should be “a must” this summer. Both recipes are easy to make and you’ll have some left for further recipes.

Caribbean Jerk Rotisserie Chicken

Ingredients
- 2 tbsp. canola oil tips & tricks
- 2 1/2 tbsp. Jamaican Jerk Seasoning see Recipe
- 4 to 5 lbs. whole chicken, rinsed, pat dry and trussed
- 1/2 cup Caribbean BBQ Sauce see Recipe
Directions
- Place an aluminum drip pan in the center of the grill, Position the rotisserie fork slightly off center on the BBQ.
- Preheat BBQ to 375ºF to 400ºF, turning on the outside burners.
- In a small bowl, add canola oil and Jamaican Jerk Seasoning; whisk to combine and set aside.
- Insert the spit rod through the bird’s cavity. Sit the chicken over a large stainless steel bowl before sliding the other fork on the spit rod then insert firmly so the chicken stays in place when turning.
- Brush on the rub, covering the entire bird.
- Transfer the chicken to the BBQ, start the rotisserie motor, close the lid and roast on indirect heat for 1:15 to 1:30 hours or until the internal temperature reads 175ºF.
- After 30 minutes of roasting, brush on Caribbean BBQ Sauce and repeat every 15 minutes or until the chicken is done.
