As long as I can remember, I’ve always liked salads! I find them tasty, very versatile plus eating them has great health benefits such as fiber, rich in nutrients, good fats, helps staying hydrated, improves digestion, stabilizes blood sugar levels 🩸, boosts immune function, etc.
 
So far, on the website, there are over 50 recipes and they just keep coming. Recently, I went to my “box” of collected recipes. Some are way back from the 80s’ that I totally forgot about. I also came across more salad recipes 📜 that I haven’t made for decades that I intend to share with you in the near future.
 
One that I keep making year after year is my Cantaloupe Cucumber Salad! Incredibly light, this delightful salad is summer in a bowl! With fresh ingredients, this is a gorgeous mix of sweet and savory all in one bite! It’s quick and easy to make 👩‍🍳👨‍🍳 plus a healthy meal or side to add to your folder!
 
Cantaloupe and cucumber are the stars ⭐ of the dish, but nonetheless, all the other ingredients play an important role in the overall taste. The fruit brings the sweetness while the cuke adds some juiciness. There’s some pepper and tartness in the background along with other flavors.
 
Two cups of cantaloupe and cucumber is the base for this fabulous recipe. More than likely, there will be some leftovers. You can make my refreshing Cantaloupe Smoothie and what’s left from the cuke 🥒, slice it, transfer it to a shallow bowl, pour white vinegar over before cracking on some black pepper. It’s a nice addition that pairs well with many proteins.
 
Cherry tomatoes 🍅, red peppers and red onions are also in this delicious mix. I’m okay with raw onions but sometimes though, they can have some bitterness to them. To remove it, here’s a great tip to know… How to Remove Bitterness from Onions
 
Cheese 🧀 is totally a must and feta is the perfect profile for this Cantaloupe Cucumber Salad. It adds some saltiness as well as creaminess to it. You can use other kinds, but trust me, this is the ideal cheese to use unless you go for Cotija which is similar but less salty.
 
Another ingredient I like using is sunflower seeds. They give a nice crunch to the dish, but also, they have amazing health benefits 💚. I think of vitamin E & B, healthy fats, an excellent source of antioxidants, supports thyroid health, lower risk of heart disease, fights cancer, lowers inflammation, etc.
 
In the video 🎥, I add Romaine lettuce but you can use others like Boston, Iceberg, Butterhead, spinach, Bibb, looseleaf, or a spring mix of lettuce. On the other hand, you can also skip the lettuce completely… it will still taste awesome! Parsley can also be substituted with cilantro or mint leaves.
 
This salad is so delish that it doesn’t really need any dressing or vinaigrette. David was shocked 😮 to have a salad without any condiment on it. If you opt to drizzle some on, try using a light one such as Champagne, Mandarin Orange, Italian, or simply a basic vinaigrette.
 
This Cantaloupe Cucumber Salad 🥗 has an amazing medley of deliciousness! With fresh and healthy ingredients, this is an original recipe that you certainly want to try this season! It can be served as a side dish or as a light meal.

Delightfully delicious, this Cantaloupe Cucumber Salad is not only tasty but healthy as well. It’s summer in a bowl!

Ingredients
  

  • 2 cups cantaloupe, seeded, peeled and cut into bite-sized pieces
  • 2 cups English cucumber, peeled, quartered and sliced
  • 1/2 cup cherry tomatoes, washed and halved tips & tricks
  • 1/2 cup red peppers, cut into small pieces
  • 1/4 cup red onions, finely chopped tips & tricks
  • 1 cup feta cheese, crumbled
  • 1/4 cup sunflower seeds
  • 3 cups Romaine lettuce, washed and torn into small pieces.
  • 1/4 cup parsley(substitute cilantro or mint leaves), chopped tips & tricks

Directions
 

  • In a large bowl, combine all the ingredients.
  • Toss and serve immediately. If using vinaigrette, use a light one.
