- 2 cups cantaloupe, seeded, peeled and cut into bite-sized pieces
- 2 cups English cucumber, peeled, quartered and sliced
- 1/2 cup cherry tomatoes, washed and halved tips & tricks
- 1/2 cup red peppers, cut into small pieces
- 1/4 cup red onions, finely chopped tips & tricks
- 1 cup feta cheese, crumbled
- 1/4 cup sunflower seeds
- 3 cups Romaine lettuce, washed and torn into small pieces.
- 1/4 cup parsley(substitute cilantro or mint leaves), chopped tips & tricks
In a large bowl, combine all the ingredients.
Toss and serve immediately. If using vinaigrette, use a light one.
