Beer Cheese Dip
With the temperature warming up, most of us will have our friends and family over more often. We fire up the barbecue and throw on some hot dogs and burgers. I like to call it “fun food”. It’s nothing pretentious and everyone loves it.
There are also snacks and appetizers that are nice to serve them. When I entertain and it’s casual, I usually opt for dip recipes like Sausalito Smoked Salmon, Jalapeño Bacon Cheese, Six Layer, Crab Artichoke, Pumpernickel Spinach, Texas Caviar, and many more including Hummus, Muhammara or even this one… Beer Cheese Dip!
If you’re a cheese lover like me, this recipe is a must have in your folder! It’s quick and easy to make plus it’s always a crowd pleaser. The only thing that takes a little time is to de-carbonate the beer by leaving it out on the counter until it gets flat which can take about 45 minutes. By doing this step, it will give a smoother texture.
What kind of beef to choose?
A lager beer is the best option as the flavor is not bitter although stout can be another good alternative. I’m not really a beer drinker but when I do have one, I either drink Coors Light, Old Stock or Kronenbourg. Basically use what you have on hand – there’s no need to use anything fancy!
Besides using it as a dip, it can also be poured over nachos and garnished with jalapeño peppers just like what you can buy at most ballparks… In case the mixture gets too thick, whisk in some milk. Now if you want a thicker version and turn your Beer Cheese Dip into a spread, omit the milk.
This is a good snack or appetizer to make when hosting. With nice seasonings, this Beer Cheese Dip is sure to please your guests! It can be served with pretzels, tortilla chips, vegetable sticks, and crackers. If you decided to make it thicker, this can be used as a topping for sandwiches, burgers and hot dogs…

Beer Cheese Dip

Ingredients
- 1 cup lager beer, room temperature and flat
- 2 tbsp. unsalted butter tips & tricks
- 2 tbsp. unbleached all-purpose flour
- 1/3 cup whole milk
- 1/2 tbsp. Dijon mustard
- 1 tsp. Worcestershire sauce
- 1/2 tsp. smoked paprika
- 1/2 tsp. garlic powder
- 2 1/2 cups sharp Cheddar cheese, grated and firmly packed
- 1/8 tsp. ground Himalayan sea salt, or to taste
- 1/8 tsp. freshly ground black pepper, or to taste (I always use mixed peppercorns)
- 1 tsp. hot sauce such as Cholula
Directions
- In a medium saucepan over medium heat, add butter and when melted, add flour. Whisk until the roux turns golden, about 1 ½ minutes.
- Pour in beer slowly whisking constantly. Add milk, mustard, Worcestershire sauce, smoked paprika and garlic powder. Whisk until the mixture is smooth and thickens, about 2 ½ to 3 minutes.
- Add cheese and whisk continuously until melted. Taste and if needed, add salt and freshly ground black pepper.
- Add hot sauce and bring the mixture to a simmer; cook for a few minutes until the sauce thickens.
- Serve warm with tortilla chips, pretzels, crackers or veggies. Yields 2 ½ cups
