I’m a foody but it doesn’t mean that I always make fancy dishes. Just like anyone else, I make comfort food and everyday regular meals. During the warmer months, the barbecue is running almost full time – I’m a mature woman and I don’t need that extra heat 😰 from the kitchen.
 
Without going crazy, a nice grilled chicken or pork chops simply seasoned with salt 🧂 and pepper is as lovely as Chicken Cordon Bleu or Pork Chops Diablo! I emphasize more on what comes along with it like Potato Salad, Coleslaw, Roasted Potatoes (on the BBQ), and sauces to top the protein.
 
For the sauces, I can pair the protein with a Soubise, Spicy Strawberry Orange Sauce, Cherry Port Sauce, Classic Mushroom Sauce 🍄, any of my Pesto Sauces, and so on. One that takes just 15 minutes and goes so well with meat is my Red Wine Cream Sauce!
 
With shallots, beef broth, of course the star of the show… dry red wine 🍷 along with seasonings such as hot paprika and freshly ground black pepper, plus some heavy cream, this easy condiment is a delicious addition to your folder!
 
This Red Wine Cream Sauce is a quick one to make and also adaptable to your liking. David and I prefer Cabernet Sauvignon but nothing is stopping you from using either a nice Merlot or Pinot Noir. The rule of thumb is to not cook with a wine you wouldn’t drink 😉…
 
The same with shallots… use red onions instead. To give this condiment some personality, I use hot paprika but you can always switch it with cayenne pepper. Keep in mind that cayenne is hotter 🥵 while paprika delivers a milder heat along with some sweetness.
 
This summer, don’t get stressed by making complicated sauces. From start to finish, you can make this flavorful Red Wine Cream Sauce in 15 minutes ⏳… definitely a bonus when the mercury rises above your comfort zone.

Red Wine Cream Sauce

Creamy and delicious, this Red Wine Cream Sauce adds a touch of class to your dinner. It takes just 15 minutes and it’s ready to enjoy.

Ingredients
  

  • 1 tbsp. butter
  • 1/4 cup shallots, finely chopped
  • 1/3 cup dry red wine
  • 1/3 cup low-sodium beef broth
  • 1/4 tsp. hot paprika
  • freshly ground black pepper, to taste (I always use mixed peppercorns)
  • 1/4 cup 35% heavy cream
  • 1 tbsp. cornstarch mixed with 1/3 cup cold water

Directions
 

  • In a skillet over medium-high heat, add butter and when it starts sizzling, add shallots; sauté for 1:30 to 2 minutes.
  • Add red wine, beef broth, hot paprika and freshly ground black pepper. Stir well and bring the mixture to a boil. Reduce to medium heat and let it simmer for 5 minutes.
  • Stir in heavy cream and increase heat back to high. When it starts boiling, pour in cornstarch mixture and stir until the sauce thickens, about 45 seconds.
  • Serve immediately or move to the back burner and keep warm until needed.
