Poaching Prawns/Shrimp – How To
Although raw shrimp or prawns are delicious, there are many recipes that ask for cooked crustaceans like in salads and appetizers or even in soups, and many more. There are some people who are not too sure what to do and how to cook them according to certain recipes. This tutorial video shows you an easy way to do it!
When cooked shrimp or prawns are required in a recipe, sautéing them is not always the right thing to do. Poaching Prawns/Shrimp is another cooking method to use and a great way to enjoy them.
Unfortunately many home cooks tend to poach them a bit longer that they should. Some might be afraid that their shrimp/prawns won’t be cooked and poach them for 3 to 5 minutes and even 10 minutes which is way too much. Don’t be afraid because as soon as they are immersed in the boiling water, their color change to pink which indicates that the flesh already starts cooking and from there, it’s just a little time to finish the process.
The best length of time for poaching prawns/shrimp is no longer than 1 minute and 15 seconds. After that, your crustaceans’ texture will start getting rubbery. Longer they are poached and chewer they will become. Transferring them quickly in an iced bath helps to stop the cooking process, leaving your prawns/shrimp with the perfect texture.
In the video, I add a few ingredients to slightly enhance the flavor without compromising on the taste of the crustaceans. Here’s what I use…
– 1 large lemon, cut in quarters
– 2 large cloves garlic, peeled
– 1 rounded tsp. whole mixed peppercorns
