Another one that is important to master when prepping ingredients is knife cuts 🔪. There are a few like lyonnaise, mince, brunoise, dice, batonnet, paysanne, rondelle, pont-neuf, chiffonade, diagonal, lozenge, fermière, and more. Today, let’s focus on a popular one which is the Julienne Cut!
 
This French knife technique is quite significant to know. After learning how, it’s not hard to do. It is often used for dishes like salads, sushi or spring rolls, stir fries, potatoes, soups or even in fajitas 🌯. These long thin strips of vegetables (or fruits) are a classic that every home cook should master…
 
Julienne Cut also known as matchstick or “allumette” in French are about 2 to 3 inches long and 1/8 inch thick although you can go for ¼ if you want… you don’t run a Michelin restaurant at home so don’t go crazy 😵! When a recipe calls for “fine” julienne then the length is the same but the width is 1/16th.
 
The easiest way to make this cut is to square the vegetable 🥕 or fruit 🍏 by making the edges flat and cutting the ends as well. The shortcut is to use a food processor or mandoline! After cutting the veggie into a matchstick, it can be turned into a “brunoise cut”.
 
Without being insanely precise in length like in a culinary school 👩‍🍳👨‍🍳, it’s important that the Julienne Cut strips are as uniform as possible. They will cook evenly or if used raw, the matchsticks will look pretty – as I’ve said many times… “we eat with our eyes first!”.
