If you’re a foody (yes with a“y”), you probably have a ton of spices and dry herbs in your cupboards. The problem with them is if they’re not used quickly, they will lose their potency. A good way to recycle them is to make your own seasonings and blends.
 
I’ve been making my own seasoning mixes and blends for years. Besides the ones I’ve already posted in the past, here’s another one to add to your list… my Jamaican Jerk Seasoning! This blend is incredibly flavorful! I like to use it for grilled foods like Rotisserie Chicken, Pork Chops, Prawns, Kebabs, etc.
 
I use a variety of spices typically found in Jamaican cuisine like cinnamon, allspice also known as Jamaica Pepper, nutmeg, cloves, etc. When it comes to thyme, you can always use dried leaves but if you’ll be using it as a rub, it’s definitely better using ground thyme instead…
 
This Jamaican Jerk Seasoning is a great one to have in your kitchen especially if you enjoy barbecuing like we do! It’s also a nice way to use up your herbs and spices before they lose their flavor…

Jamaican Jerk Seasoning ingredients…
– 1 tbsp. garlic powder
– 1 tbsp. brown sugar (substitute coconut sugar)
– 2 tsp. cayenne pepper
– 2 tsp. onion powder
– 2 tsp. ground Himalayan sea salt
– 1 1/2 tsp. ground thyme
– 1 tsp. ground ginger
– 1 tsp. ground allspice
– 1 tsp. smoked paprika
– 1/2 tsp. freshly ground black pepper, or to taste
– 1/2 tsp. red pepper flakes
– 1/2 tsp. ground nutmeg
– 1/4 tsp. ground cinnamon
– 1/4 tsp. ground cloves

    Mix all the ingredients in a bowl. Transfer to an airtight container. Yields 6 1/2 tbsp.
    To make a rub; use 2 tbsp. of canola oil or other flavorless oil with 2 1/2 tbsp. of Jamaican Jerk Seasoning and whisk until well mixed. Apply generously on protein of your choice.
