Key Lime Pie
If you live above the 49th parallel, at some point during the winter time ⛄, you feel the need to escape to a warmer destination. When I was living in Toronto, the nearest destination was Florida. As I became a snow bird, I really started appreciating American southern cuisine. From savory to sweet, many recipes tasted so “fresh”!
I’ve never been a big “dessert” person but once in a while, I enjoy something sweet. Going down to Florida at least once a year, there was a dessert I really enjoyed and ordered quite often. It was Key Lime Pie 🥧! I loved the tartness mixed with the subtle sweetness of this regional pie. It was somewhat sweet but not overly.
When I moved to the West Coast, Florida is a long ways away 🛫 and the closest warm destination besides Palm Springs is Hawaii. I’ve been to Hawaii several times but I’ve never found a “real” Key Lime Pie to compare to the one’s I experienced in Florida. If you know me, the only option I had was to make my own…
I’m a “sunshine lover” 🌞 and enjoy the warmth and comfort of sunny days. Unfortunately, British Columbia can be slightly cool and rainy ☔ therefore to bring a taste of sunshine to my table, I love making this pie. The technique is pretty simple and the only thing you really need is a good citrus press or a juicer. I also have some great kitchen tricks on how to Extract the Most Juice from Citrus Fruits that you definitely should take a look at. You should also make your own Graham Cracker Crust 👩🍳… it’s so easy!
Another plus to this Key Lime Pie recipe is that it’s eggless! The taste is as rich, smooth and beautiful as the ones with eggs in it. I’m sure you’ll enjoy this pie 🥧 as much as I do and hope it brings some happy summer/vacation memories to your table…

Key Lime Pie

Ingredients
- 1 (9-inch) prepared Graham Cracker crust see Recipe
- 2 cans (about 2 1/2 cups) sweetened condensed milk
- 1/2 cup light sour cream
- 20 large Key limes, juiced (about 3/4 cup) tips & tricks
- 1/2 tbsp. lime zest, grated
- whipped cream, for garnish (optional) tips & tricks
- 7-8 small lime twists, for garnish (optional)
Directions
- Preheat oven to 350ºF.
- In a medium bowl, combine condensed milk, sour cream, lime juice and lime zest. Mix well and pour into the graham cracker crust.
- Transfer to the preheated oven and bake for 5 to 8 minutes or until tiny bubbles burst on the surface of the pie - DO NOT BROWN!
- Remove from the heat and chill pie thoroughly before serving. Garnish with lime slices and whipped cream if desired.
