Cucumber Salad
Over a decade ago when I met David’s family, I felt comfortable with them right away and it was reciprocal; they accepted me immediately. His father was fun and always had a little story to tell. His mother loved sharing some memories and bringing up special events that occurred in the past. His “Oma” was different. She had the eye of an eagle, sharp like a knife, filled with wisdom and she was always listening and commenting only when it was time to do so… I loved her!
David is a twin and when he and his brother were born, their mother had some complications therefore she couldn’t look after two little babies. Oma helped her by taking David with her and cared for him until their mother gained some strength. Oma and David always had a special bond… he was her favorite! – He’s mine too… lol!
Just like in mine, David’s family had some great home cooks. David learned a lot from the women in his family and many dishes he had me try were from them including this one from his Oma… Cucumber Salad! Who knew that a few simple ingredients mixed together could be so delicious…
I really enjoy this salad… it’s so “summery”! It’s fresh, light and very flavorful! I like to pair this Cucumber Salad with many proteins like Hamburgers, Hot Dogs, Grilled or fried chicken, pork chops, etc. It’s also a great picnic or potluck item to bring along.
The original recipe wasn’t exactly like this one. David and I altered it to make the salad even tastier. Originally it had cream in it making it a little “blah”. Instead, we added a little white vinegar to give it a little extra tang. I also added powdered sugar, not a lot but enough to bring all the ingredients together. Summer is about enjoying fresh produce and making light, fresh dishes. This Cucumber Salad is all about that, absolutely perfect to serve on hot days. It’s a simple and yet delicious recipe to add to your menu.

Cucumber Salad

Ingredients
- 1/4 cup light sour cream
- 1/4 cup Miracle Whip®
- 1 1/2 tbsp. fresh dill, chopped tips & tricks
- 1 tbsp. white vinegar
- 1/2 tsp. powdered sugar tips & tricks
- ground Himalayan sea salt, to taste
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- 4 cups English cucumbers, thinly sliced
- 1/2 cup red onions, thinly sliced (Lyonnaise cut) tips & tricks
Directions
- In a bowl, add sour cream, Miracle Whip®, dill, vinegar, sugar, salt and pepper; stir until well combined and set aside.
- Using a mandolin, slice cucumbers thinly and set aside. Slice onions thinly and halve the slices.
- In a large bowl, combine cucumbers and onion slices. Pour half of the dressing over and stir well until the veggies are well coated. Slowly add more dressing to reach desired consistency.
- Cover and transfer to the refrigerator for at least 1 hour before serving.
