At home, we eat several different proteins but it seems like chicken 🐓 is the most popular. This meat is so versatile. It can be sautéed, grilled, Baked, Poached, barbecued, smoked, Roasted, fried, and so on… It all depends on the recipe.
 
Talking about frying… When I feel lazy and don’t want to use my deep-fryer, I make my Crispy Oven Baked Chicken recipe! Juicy on the inside with crispy skin on the outside, this is a meal your whole family will love ❤. I use a special spice mix for dredging the chicken, giving it a nice balanced flavor.
 
The thing about using a fryer is the oil. After you’re done with the recipe, you have to let the oil cool off which can take quite a while then transfer it to a container or dispose of it. Last but not least, there’s the fryer to clean. You can always use a deep skillet and yet, the same steps apply. The oven method is quicker and less messy… perfect for when we want to clean things up faster.
 
When I make my Crispy Oven Baked Chicken recipe, I like to serve it with my BBQ Sauce for Chicken along with Fries 🍟 and Coleslaw. You can eat the chicken without all the other sides but why would you? They complete the meal so nicely.
 
Although I bake the chicken pieces in the oven, nothing stops you from frying them in a skillet or deep-fryer. Both methods are good using the same ingredients; spice mix, hot sauce mixture and flour mixture. I just oven bake them more often than I fry them.
 
This Crispy Oven Baked Chicken is so moist, juicy, crispy and flavorful… definitely a keeper 😉! By baking it, you’re making a healthier choice plus there’s less mess. For someone like me who cooks constantly, that’s a big bonus on its own!

Ingredients
  

SPICE MIX

  • 1 1/2 tbsp. smoked paprika
  • 1/2 tbsp. onion powder
  • 1/2 tbsp. garlic powder
  • 1 tsp. dried basil leaves
  • 1 tsp. ground thyme
  • 1 tsp. ground rosemary
  • 1 tsp. ground sage
  • 1 tsp. ground Himalayan sea salt
  • 1 tsp. freshly ground black pepper (I always use mixed peppercorns)
  • 1/2 tsp. cayenne pepper

CHICKEN

  • 1/3 cup hot sauce such as Frank's Red Hot®
  • 2 large free-run eggs
  • 1 cup unbleached all-purpose flour
  • 1/2 cup fine breadcrumbs
  • 1 tsp. baking powder
  • 3 tbsp. spice mix
  • 8 pieces chicken (drumsticks & thighs)

Directions
 

SPICE MIX

  • In a small bowl, combine all the spice ingredients and set aside.

CHICKEN

  • Preheat oven to 400ºF and lightly grease a rack sitting on a baking sheet lined with foil; set aside.
  • In a bowl, combine hot sauce and eggs; whisk very well. Place chicken pieces in a large bowl and pour sauce mixture over; coat well.
  • In another bowl, combine flour, breadcrumbs, baking powder and spice mix; whisk well. Transfer the flour mixture into a re-sealable plastic bag. Add a couple of pieces of chicken at a time, close the bag, and shake until well coated.
  • Place the floured chicken pieces on the prepared baking sheet. Coat the chicken pieces on both sides using cooking spray or an oil diffuser.
  • Transfer to the preheated oven and bake for 50 minutes or until the internal temperature reaches 165ºF, rotating the baking sheet halfway through cooking.
  • When the time is up, flip the chicken pieces and bake for an extra 5 to 8 minutes or until the skin is crispy.
  • Remove from the heat and let sit for 5 minutes before serving.
