At the end of August, there are so many fresh produce items widely available. The shelves at the farmers’ markets 👩‍🌾👨‍🌾 are full of colorful fruits and vegetables. Also, like us, many gardeners slowly harvest their crops.
 
Like I do year after year, I sort them, clean 💦, and process our harvested items for either canning or recipes. I enjoy making my Panzanella Salad, Caprese Skewers, Herbes de Provence, Pickled Green Beans, Tomato Rosemary Focaccia, and so on.
 
Another one that has all the fresh ingredients that the end of summer has to offer is this one… Summer Harvest Bowl! Loaded with deliciousness, this is a tasty recipe to enjoy for lunch or dinner as a light meal. From start to finish, it takes less than 30 ⏰ minutes… another plus about this lovely dish!
 
This is a recipe I put into the “I feel good” 🥰 category! With red cabbage, avocados, Romaine lettuce, cherry tomatoes, and more, along with well-seasoned chicken cubes, this is a healthy and also a satisfying meal everyone will love!
 
Cooking the chicken 🐓 takes only 7 minutes at most. Because we grow our own herbs, I use fresh thyme and rosemary. Both can be substituted with dried. The ratio from dry to fresh is 3:1 therefore, a tablespoon of fresh equals a teaspoon of dry.
 
This Summer Harvest Bowl is so easy to make. First, the Romaine lettuce is placed at the bottom of each bowl. I could’ve used spinach or iceberg 🥬, which I’m sure both would’ve been good. Here are a couple of links you should check out…

From here, I divide the bowls into 6 sections, and the reason why I like doing that is that we eat with our eyes 👀 first. It makes such a gorgeous presentation. It starts with chicken cubes, then red cabbage, followed by cheese, red onions, avocado, and last but not least cherry tomatoes.
 
When it comes to dressing, there are a lot of choices to choose from on the website 💻. It can be Mexican, Creamy Cilantro-Lime, Ranch, Catalina, Russian, Thousand Island, etc. There’s also another one that is coming up next week, and it’s my Creamy Poppyseed Dressing, so stay tuned…

Ingredients
  

  • 2 large (½ avocado per bowl) avocados, stones removed, peeled, and cubed tips & tricks
  • 2 tbsp. freshly squeezed lime juice tips & tricks
  • 2 large chicken breasts, cubed
  • 1 ½ tbsp. olive oil tips & tricks
  • ground Himalayan pink salt, to taste
  • freshly ground mixed peppercorns, to taste
  • 1 tbsp. ginger, minced
  • 2 large cloves garlic, pressed
  • 1 tbsp. fresh thyme leaves (substitute 1 tsp. dried thyme leaves), finely chopped tips & tricks
  • 1 tbsp. fresh rosemary (substitute 1 tsp. dried rosemary), finely chopped
  • 12 cups (3 cups per bowl) Romaine lettuce, torn tips & tricks
  • 2 cups (½ cup per bowl) red caggabe, thinly sliced
  • 1 ⅓ cups (⅓ cup per bowl) sharp Cheddar cheese, cubed tips & tricks
  • 1 cup (¼ cup per bowl) red onions, finely chopped tips & tricks
  • 2 cups (½ cup per bowl) cherry tomatoes, washed and halved tips & tricks

Directions
 

  • In a bowl, add avocados and squeezed lime juice. Toss to coat and set aside.
  • In a skillet over medium heat, pour in oil, and when it starts shimmering, add chicken cubes; season with salt and pepper. Sauté until halfway cooked.
  • Add ginger and garlic. Sauté the ingredients until the meat is almost done. Add thyme and rosemary; cook until the chicken cubes are no longer pink; remove from the heat.
  • To assemble…
    Placelettuce at the bottom of the bowls. Divide the bowls into 6 sections, and placechicken cubes in the first one. Next to them, add red cabbage, followed bycheese, red onions, avocados cubes, and cherry tomatoes.
  • Drizzle on either Creamy Cilantro-Lime dressing or Creamy Poppyseed Dressing.
