Winter is all about feeling cozy 🥰 with these dishes. They’re simple and yet so delicious! They’re economical, mostly done in a one-pot dish and quite versatile.
 
When it comes to casseroles 🍲, most of them are simple to prepare with great yummy results! I think of Tuna casserole, Chicken Divan, Pepper & Sausage Casserole, Pierogi Casserole, Mediterranean Eggplant Casserole, and the list goes on…
 
Another one that is added to this list is Southwest Chicken & Green Bean Casserole! With a gorgeous mixture of ingredients, seasonings along with chicken breasts 🐓 and green beans in a nice creamy sauce, this comfort food is undeniably satisfying! Like most casseroles, they’re easy to prepare plus they freeze very well too.
 
This can be turned into a one-pot dish. The reason why I say “can be” is because the green beans don’t have to be blanched. I prefer blanching them for a few reasons. It helps to preserve their bright color 🌈, flavor and texture, slows vitamin loss, and also reduces pesticides on the surface. It’s a quick step to do that is so worth it! I made this Southwest Chicken & Green Bean Casserole numerous times using tortilla chips as well as dismissing them. Both ways are delicious! One thing to keep in mind is when reheating the leftovers, the tortilla chips will get soggy. Another way to make it is by using Panko breadcrumbs, mixing it with melted butter 🧈 and sprinkled on top instead of using tortilla chips.

Southwest Chicken & Green Bean Casserole

Tasty and colorful, this Southwest Chicken & Green Bean Casserole is a great weeknight meal! It’s another amazing one-pot dish to enjoy!

Ingredients
  

  • 1 1/2 tbsp. olive oil tips & tricks
  • 2 large skinless, boneless chicken breasts, cubed
  • ground Himalayan pink salt, to taste and divided
  • freshly ground black pepper (I always use mixed peppercorns), to taste and divided
  • 1 tbsp. butter
  • 1 cup yellow onions, chopped
  • 1/2 cup celery, chopped tips & tricks
  • 1/2 cup red peppers, chopped
  • 1/2 cup poblano peppers, chopped
  • 2 large cloves garlic, pressed
  • 3 tbsp. unbleached all-purpose flour
  • 1/2 cup low-sodium chicken broth
  • 1 1/2 cups heavy cream
  • 1 tbsp. Old El Paso Taco seasoning see Recipe
  • 1/2 tbsp. ground cumin
  • 1 tsp. smoked paprika
  • 1 tsp. dried thyme leaves
  • 1 lb. green beans, ends trimmed and blanched tips & tricks
  • 2 cups tortilla chips, broken into smaller pieces *optional
  • 2 cups sharp Cheddar cheese, grated

Directions
 

  • Preheat oven to 350ºF and lightly grease a 9 x 13-inch baking dish; set aside.
  • In a large skillet over medium heat, add oil and when hot, add chicken cubes; season with salt and black pepper. Sauté until no longer pink, about 4 minutes.
  • Using a slotted spoon, transfer the cubes to a bowl and set aside.
  • Melt butter in the skillet before adding onions and celery; season with salt. Sauté for 2 minutes.
  • Add red and poblano peppers; sauté for 2 minutes.
  • Add garlic and sauté for just 1 minute.
  • Coat the ingredients with flour and cook for 1:30 minutes. Pour in broth and stir constantly until the mixture thickens and becomes pasty.
  • Add heavy cream and seasonings; mix well. Add blanched green beans and return chicken with any accumulated juices. Stir to combine.
  • Pour the mixture into the prepared baking dish. Top with tortilla chips and grated cheese.
  • Cover with foil lightly greased and transfer to the preheated oven; bake for 15 minutes.
  • Uncover and bake until the cheese is melted and the top is golden brown, about 10 minutes.
  • Remove from the heat and let it rest for 10 to 15 minutes before serving.
