I enjoy diversifying my menu almost every day. I always like to have a balanced diet that includes meat, fish, veggies, eggs, legumes, dairy, fruits 🍏, whole grains and nuts. As each food group brings important nutrients to our body, alternating our menu is essential.
 
After I moved in 🚚 with David, it was hard for me to keep a healthy diet as he was more of a “meat & potato” kind of guy. I finally got him to understand the importance of eating a little bit of everything… weekly.
 
One food group that I have to put my foot down quite often otherwise we probably would only eat it a few times a year is fish. I guess the way we were brought up plays a significant part in our eating habits. My parents served a meal with fish almost every week whereas David’s mother 👵 really didn’t – perhaps that explains why he’s not inclined to eat that kind of protein more often.
 
One recipe that he enjoys when I make it is Sole Almondine! Lightly seasoned, then quickly fried in butter 🧈 and served with a light buttery almond sauce, makes this a tasty meal to have! This is a recipe that you can easily serve anytime… There are other ones that David likes as well which are Sole Meunière, Panko Breaded Fish Fillet, Cod au Gratin, and Caribbean Style Fish Stew. These are delicious, quick and easy dishes to add to your folder.
 
Although this dish is traditionally served with sole 🐟, depending on if I can find it or if it’s thick enough, many times, I replace it with fillet of tilapia. For us, both work and the results are quite similar.
 
This is a great meal to enjoy during weeknights as well as weekends and the “big” plus of this recipe is it doesn’t take much time to make. Within 30 minutes ⏰, you have yourself quite a nice dish to enjoy. Served with Herb & Butter Rice and steamed vegetables, this Sole Almondine recipe should be on your “to do” list soon. I’m positive it will encourage you to eat fish more often…

Sole Almondine

Sole Almondine

Elegant, light, delicious, quick and easy to prepare, this Sole Almondine recipe is a lovely dish you'll be proud to serve to your guests!

Ingredients
  

  • 4 large sole fillets
  • ground Himalayan pink salt, as needed
  • freshly ground black pepper, as needed (I always use mixed peppercorns)
  • 1/2 tsp. mild paprika, or as needed
  • 3 tbsp. freshly squeezed lemon juice, divided tips & tricks
  • 1/4 cup sliced almonds tips & tricks
  • 3 tbsp. clarified butter, divided tips & tricks
  • 2 tbsp. white wine Footnote
  • 1 tbsp. fresh dill, chopped tips & tricks

Directions
 

  • Season the fillets with salt, freshly ground black pepper and mild paprika. Drizzle on about 1 tsp. lemon juice and set aside.
  • In a small saucepan over medium heat, add almonds and sauté for 5 minutes or until golden; transfer to a small bowl and set aside.
  • In a large skillet over medium heat, add 1 tbsp. butter and when it’s melted, working in batches, add the fillets. Cook until the fish is golden, about 3 minutes per side. Remove from the skillet and place them on a warmed serving dish.
  • Return the skillet to the heat and add the remaining butter; add lemon juice. Pour in white wine and add toasted almonds. Toss the sauce in the pan a few times and cook for 45 to 60 seconds; remove from the heat.
  • Spoon lemon-butter sauce over the fillets and sprinkle with dill. Serve immediately with steamed veggies and Herb & Butter Rice.

Footnote: My preferred wine for this recipe is Pinot Grigio
