Smoked Salmon Fettuccine Alfredo
Have you ever had a popular menu item at a restaurant a few times and somehow, it never really impressed you. Perhaps you even wondered if there was any way to make it taste better. Well, let me tell you that I have a list of several dishes that didn’t impress me until I decided to make some changes to them, substitute a few ingredients here, add more seasonings there and voilà… perfect!
Let’s see…. West Coast Smoked Salmon Chowder is among them as well as Tuna Casserole. The first one is when David and I went to a waterfront restaurant in Vancouver to celebrate our anniversary. It was good but not great. When it comes to Tuna Casserole, I never had a good one… It was so plain and blah until I did it my way. Now it’s one of our favorites. The same applies to our Stuffed Peppers; far from being boring!
There’s another dish on the list that I always found too rich and monotone, with nothing to excite my taste buds. One day, I decided to put a twist on it and I’m glad I did. Here’s my Smoked Salmon Fettuccine Alfredo! Creamy, smoky along with some lovely seasonings, this improved Italian dish is incredibly delicious! It still has the basics of the classic one but it is now more elevated in flavor. If you ask me if I would order the “traditional” dish over this Smoked Salmon Fettuccine Alfredo, my answer would be – “No grazie!”.

Smoked Salmon Fettuccine Alfredo

Ingredients
- 10 ounces fettuccine, cooked according to package instructions see Recipe
- 1 tbsp. oil tips & tricks
- 1/4 cup red onions, minced
- 2 large cloves garlic, pressed
- 1/4 cup unsalted butter
- 1 1/4 cups 35% heavy cream
- 1/4 cup dry white wine such as Chardonnay, Sauvignon or Pinot Grigio
- 1 cup (1/2 lb.) smoked salmon, flaked
- 1 1/4 cups Parmigiano-Reggiano cheese, grated and divided
- 1/4 tsp. white pepper
- 1/4 tsp. red pepper flakes
- 1 tsp. lemon zest
- 2 tbsp. dill, chopped tips & tricks
- ground Himalayan pink salt, to taste if needed
Directions
- Cook pasta according to the directions; drain.
- Meanwhile in a large skillet over medium heat, add oil and when hot, add onions and garlic; sauté for 1 minute. Add butter and stir until melted.
- Pour in heavy cream and wine; bring to a simmer. Add salmon, ½ cup cheese and season with white pepper and red pepper flakes; stir well.
- Add the cooked pasta and gently combine it into the mixture. Add half of the remaining cheese, mix well before adding the rest of it. Stir and let the mixture simmer for 2 minutes.
- Add lemon zest and dill; stir well and serve immediately.
