Slow Cooker Rice Pudding

Depending on the menu or when you’re entertaining, sometimes all the burners are taken up with pots and pans simmering delicious dishes. Unfortunately, that doesn’t leave any space to cook a nice dessert unless you take your slow cooker out of the pantry, dust it off and make this classic Slow Cooker Rice Pudding!
 
I love this dessert 😍! Similar to an Indian kheer, it’s smooth and creamy, perfect for after dinner or as a snack. The way I like mine is warm, sprinkled with ground cinnamon, a little drizzle of maple syrup as well as half-and-half… oh boy, it can’t get better than that!
 
Another reason why I like making this Slow Cooker Rice Pudding recipe is because I don’t have to constantly watch it. I mix the ingredients, close the lid, set the timer for 2 hours and move on with my life. A couple of hours later, I add two more ingredients, set it for another hour and simply forget about it. The slow cooker does its job. It’s like a “personal” chef 👩‍🍳 in your kitchen.
 
As I said, I like mine warm but if you prefer it cold, you can spoon it in a bowl and let it cool off for 20 minutes or so. One thing I forgot to mention in the video 📽 is to place a piece of wax paper on top making sure it touches the surface. This will prevent a skin from forming. From there, you put the lid on and transfer it to the fridge until chilled.
 
Now there’s an ingredient that is definitely not common in this popular dessert and it’s Vanilla Sugar. I posted a video a couple of years ago on how to make it and here’s the link for it Vanilla Sugar – How to Make It. Can you substitute regular granulated sugar? Of course but I highly suggest you make this flavored sugar because it adds more taste to the dish.
 
Don’t be alarmed if there’s no more room on the stove to make a yummy dessert. With this Slow Cooker Rice Pudding recipe, not only is it easy to put together but it will also give you a break without babysitting it… a big bonus 😉 when there are many things going on at once in the kitchen!

Slow Cooker Rice Pudding

Smooth, creamy and delectable, this easy Slow Cooker Rice Pudding is a lovely dessert to serve with ground cinnamon and maple syrup!

Ingredients
  

  • 2 tbsp. soft butter, or as needed
  • 1 cup short-grain rice such as arborio
  • 2 cups 1% or 2% milk
  • 1 can (12 oz./354 ml.) evaporated milk
  • 1 1/2 cups 35% heavy cream
  • 1/2 tsp. ground Himalayan sea salt
  • 1/2 cup vanilla sugar (substitute granulated sugar) tips & tricks
  • 1 tsp. pure vanilla extract

Directions
 

  • Grease the ceramic pot generously with butter making sure to coat the sides as well.
  • Add rice, milk, evaporated milk, heavy cream, and sea salt; stir well. Cover and set the temperature to “High” for 2 hours.
  • When the time is up, add vanilla sugar and vanilla extract. Stir well and set the temperature on “Low” for 1 hour.
  • Let it cool a little before serving. If preferred cold, transfer to a bowl, let it cool off for 20 minutes before transferring to the fridge for a few hours.
